I know so many of you have (or will soon have!) hella amounts of zucchini, and I have to warn you: my ZUCCHINI BREAD is known far and wide to be highly addictive!

I’ve taken samples to my clients (and their kids!) and everyone is dumbfounded by the deliciousness. You'd never know it was vegan, gluten-free and refined sugar-free! So plan to halve the recipe or give some away (seriously.) 💚

SHADY GROVE ZUCCHINI BREAD (v/gf)
(Makes 2 loaves or 24 muffins)

2 cups brown rice flour
2/3 cup tapioca flour
1/3 cup all purpose gluten-free flour (I like Bob’s Red Mill)
1/2 tsp sea salt
1 tsp baking soda
1/4 tsp baking powder
1 1/2 cups coconut sugar
1/2 cup raw turbinado sugar
1/2 cup Earth Balance Buttery Spread (or other vegan butter)
1/4 cup organic unsweetened applesauce
3 chia eggs (3 Tbsp ground chia seed, mixed well with 3/4 cup warm water)
2 cup organic zucchini, grated in food processor
1/2 cup fresh pineapple, grated in food processor
1 cup raisins
1 cup chopped walnuts

-Grate zucchini and pineapple separately in food processor and place in medium sized bowl. (Tip: press the liquid out of the zucchini or place it in an air-fryer on the lowest temp for 10 minutes to get the excess moisture out.)
-Chop walnuts and place in bowl with zucchini and pineapple. Add raisins.
-Preheat oven to 350F.
-Make chia eggs: mix ground chia and warm water in small bowl, set aside. It will set up in about 5 minutes.
-Sift together flours, baking powder and soda, and salt until well combined. Add sugar and mix well.
-Add Earth Balance Buttery Spread and applesauce to dry mixture, and cream together with an electric hand mixer til well combined.
-Add chia eggs to mix, and combine well using your hands (do not use electric mixer).
-Add all items from medium sized bowl to mix, and combine well by hand.
-Pour mixture into parchment-lined loaf pans or lined muffin tin.
-Muffins: bake for 35-39 minutes or until toothpick inserted in center comes out clean.
-Loaves: bake for 45-50 minutes or until toothpick inserted in center comes out clean.
-Cool for 10 minutes before serving.

Menopause is our next topic, and this first post is about how taking radical responsibility for your physical and emotional health starts with ONE QUESTION.

For women, this is the time of our lives when we wake up and begin to come to terms with the consequences of a life spent caring for others. Let’s face it, we were taught that a “good” woman does just that: she puts the needs of others above her own. She’s an attentive mother, a caring wife, and a dutiful daughter. She doesn’t make too many waves and she doesn’t ask for much help. She’s sacrificial. She’s all things to all people and on the list of priorities she often puts herself last.

You might be thinking, “Yes, that’s me!” But you might also be thinking that’s NOT you. When I was 60 pounds overweight with debilitating chronic fatigue and a host of inflammatory symptoms, I don’t know that I would have said “I never put myself first.” And yet…

I felt guilty about spending time by myself, spending money on just myself, or doing things that would further my own health or personal growth beyond books. I had a toddler, 2 teenagers, a husband who worked long hours and a grandmother who was dying of Alzheimer’s whom I was helping to care for. I wouldn’t have said “I put myself last,” but I definitely would have said that all the other things and people in my life came first.

And there were consequences to that. Over the years I spent less time outdoors, less time getting any kind of meaningful exercise, less time focusing on health yet more time trying every diet out there. I faded away and became less and less ME and more and more what everyone needed me to be. And “coincidentally,”my hormones became completely whacked out - I had hot flashes, epic night sweats, my hair was already graying and my periods were all over the place. The doctors said I must be going into early menopause.

During this time, there was one specific incident that marked how I felt and I’ll never forget it.

I was home alone after dropping my son off at school and after getting out of the shower I realized I had left my clothes, which I typically brought into the bathroom with me, laying on my bed. I always got dressed in the bathroom, but since I was by myself I walked into the bedroom to get dressed. As I walked to the bed to get my clothes I caught an unexpected glimpse of myself in the full length mirror…and I was shocked. I hadn’t looked at my entire naked body in a very long time, and that was unconsciously deliberate on my part. What I saw made me break down sobbing.

I was not only overweight, my body looked old and tired far beyond my years. My only thought was “Who IS this person?” It had happened over the course of time - many years of putting my emotional and physical health dead last, without really realizing it.

Sure, I had dieted. A LOT. But I hadn’t ever made a true lifestyle change and I was looking in the mirror at the result. I was fat (this is how I thought of myself), exhausted, sick and depressed. I sat on the bed and cried.

When I work with women 1:1, the question I always ask is first is, “Who are you? Don’t tell me about your marital status, kids or job. That stuff is great, but I want to know about YOU.” The response is typically silence, because that’s what happens when you spend most of your life doing for others and putting their needs first. You see yourself as what you can provide or what you are in relation to them, and lose sight of most everything else.

As I said at the beginning, though, this is OUR time. This is our time of awakening when we say:

✨It’s time for me.
✨It’s time to remember who I really am.
✨It’s time to use my voice.
✨It’s time for me to use my gifts and let myself shine.
✨It’s time to get emotionally and physically healthy and to become the best version of myself.
✨It’s time to take my life back.

But I can promise you, the real transformation always starts with this question:

Who am I?

This is how my journey started, and answering that question every day is how I moved forward and completely changed my health and my life.

Did you know that a 1999 clinical study confirmed that lavender is a natural antihistamine?

I didn’t! 😳

My husband and I have been struggling with the sky-high grass pollen count in our area, experiencing sneezing and really itchy eyes. Some days Jon isn’t even able to wear his contacts because his eyes are so irritated - he has to wear his glasses instead.

I noticed an antihistamine effect when I started drinking my Bewitching Beauty Tea, but I wanted to confirm so I had him try it. Turns out, whenever he drinks the tea in the evening, he can wear his contacts the next morning!

I had such a great time speaking at Wellness & Walkabout at Red Oak Animal Rescue yesterday and meeting the guests and resident animals! Special thanks to Wendy and Rex at ROAR, Monica at Rollin' Bowls for the scrumptious vegan eats, Kristi and Liz for helping to organize, promote and photograph the event, and to all my clients and followers who showed up. Great turnout! Someone told me that meeting me was better than meeting Brad Pitt 🤣💚.

And I can’t leave out Mina, who let me stay at her beautiful, peaceful Air BnB. I loved every minute!

Indulging in some screamo on the trail today because someone from Lorain County Metro Parks keeps cutting down Staghorn Sumac trees, which are MEDICINAL and NOT POISONOUS.

Poison sumac has white berries, not red. Both Smooth Sumac and Staghorn Sumac have red berries and are not only medicinal for humans as well as completely edible, they provide nutritious food for our wildlife.

I love our trails, but Lorain County Metro Parks, please do better.

Introducing my newest medicinal tea blend….

Have you heard or seen the term “vegan dairy” on a product? Here are some products that currently advertise that term:

Perfect Day
Nick’s Vegan
UnReal Milk
Cowabunga
ReMilk

But what does it mean?

I’ve been eating vegan for almost 20 years, and there have been many dairy substitutes to come along on that time. When I first started out, soy milk, veggie cheese and veggie butter were about all you had to choose from. And to be honest, the veggie cheese was just plain gross! The butter was pretty good, but didn’t look or taste like dairy butter. I made do 🤷🏻‍♀️.

But every year a new product has come out, and now we have some seriously tasty options. As I said in a post earlier this week, I love almond milk and oat milk, Earth Balance butter and Miyokos butter, and Follow Your Heart and Violife cheeses. There are even plant-based ice creams, cream cheese, sour cream, and more! Some are soy based, some are almond based, and there are even cashew, h**p, rice and coconut options.

But the operative term here is PLANT-based. All of these products have plants at their center, and contain no lactose or casein (the primary proteins in dairy) whatsoever.

Enter the new kid on the block: “Vegan Dairy.” It’s a contradiction of terms since the word vegan inherently means no animals were used and the word dairy specifically means derived from cow’s milk. So what’s the deal?

Well, in short, scientists have come up with a way to make cow’s milk in a laboratory, without the use of animals. There are several similar technologies, but they all revolve around genetically engineering a non-animal organism like yeast or plants to produce dairy proteins using the genome of a dairy cow.

So, since no animals or animal products are used to produce it, they can technically call it “vegan dairy.” That being said - and this is the important part - the end product is molecularly identical to dairy protein. This means if you have a problem with dairy, it could cause a similar reaction in your body.

Now, these products are typically lactose free, but that should be listed on the label.

My recommendation? I’m personally avoiding it. While I appreciate that they can engineer something like this without using or harming animals, dairy has been nothing but problematic for me. When I got dairy out of my life, that’s when all my joint inflammation finally went away for good - and that was after years of medications and shots and unbearable pain. And I’ve seen this same result happen for many of my clients who presented with joint inflammation - getting the dairy out means getting the inflammation out.

So remember: be a good label reader! Any “vegan dairy” product should have milk protein listed in the ingredients. To be safe, stick with plant-based dairy substitutes. 💚

The Standard American Diet (25% animal products, 65% processed foods and only 10% veggies and fruits) kills millions of people each year via heart disease, diabetes, cancer and obesity. But with their dying breath these people will ask “but how do you get your protein” on a healthy, plant-based diet.

I got some pushback on yesterday’s post from someone saying that living this way “too expensive”, so let’s address that UTTER BS.

A few months back, someone on my newsfeed posted the picture on the left, saying she and her husband were trying to get healthy and that this lot of groceries costed her $50.46.

😳

This wasn’t surprising to me. She’s got a ton of dairy here, some processed food, and very little produce. She’s also clearly confused about what’s healthy and what isn’t, which I sadly see a lot.

But the truth is, I constantly hear the argument that eating healthy is too expensive, so let me put it too you as plainly as I can:

It just isn’t true. 🤷🏻‍♀️

The best way to illustrate this is to list some actual prices for comparison.

The other picture you see here is from a recent shopping trip to Target. We have that store as well as Giant Eagle, Meijer and Walmart around here, so that’s where I’m getting these prices. (I’m in Ohio and so is this person who posted her groceries.)

I bought tofu on my trip to Target and it was a 14oz container. Tofu is a great and really versatile source of organic protein, so I’ll start with proteins first - all of these are priced out at 14oz so the comparisons are apples to apples. Let’s assume you’re trying to eat “healthier” on the Standard American Diet, as well.

Standard American Diet Proteins
-Beef, 14oz, $5.69
-Chicken breast, 14oz, $5.14
-Pork chop, 14oz, $4.38

Plant-Based Proteins
-Tofu, 14oz, $2.69
-Organic beans, 15oz can, $1.16
-Hummus, 14oz, $4.85

Dairy
-Organic 2% milk, 1/2 gallon, $4.89
-Organic American sliced cheese, $4.99 per package
-Kerry Gold butter, $4.49 per 8oz tub

Plant-Based Milks, Cheese and Butter
-Oat milk, 1/2 gallon, $4.29
-Vegan American slices, 5.19 per package
-Organic Earth Balance vegan butter, 5.29 per 13oz tub

Even from these examples, you can see that living a healthy plant-based diet is less expensive. Look how much cheaper the proteins are!! And even if you compare something like Impossible Meat, which I consider a treat and not a staple, it’s $5.82 for 14oz, which is comparable in price to beef.

Now let’s look at some items I consider staples:

Dry organic brown rice, $4.99 for 2 pounds (10-20 servings)
5 lb bag red potatoes, $3.78
10 oz bag frozen organic broccoli, $2.19
3 lb bag sweet potatoes, $2.49
10 cups organic greens (spinach, kale, etc) $4.98
3 lb bag apples, $3.99
Frozen wild blueberries, 2.5 lbs , $8.79

This is A LOT of food! So let’s compare what I can get for the same amount ($50.46) as the acquaintance on my newsfeed.

Using the pricing above:

2 packages tofu
4 cans beans
1/2 gallon oat milk
Earth Balance butter, 1 tub
Brown rice, 2 lbs
Red potatoes, 5 lbs
Frozen broccoli, 10oz package
Sweet potatoes, 3 lbs
Large tub of organic greens
Apples, 3 lbs
Frozen blueberries (for my smoothies!), 2.5 lbs
TOTAL: $50.81

SEE WHAT I MEAN?? 🗣️🗣️🗣️

And this isn’t even taking into consideration that you can shop at places like ALDI or Costco and save even more.

Are you going to come across some processed plant-based items that are more expensive? Sure. Government subsidies make a lot of Standard American Diet food items (meat, dairy, processed food) seem cheaper than they actually are because a portion of your taxes is being paid to fund those industries on the back end and artificially lowering the price you see at the store, so in turn it makes some of the processed plant-based items or organic items *seem* more expensive.

But look at the list of food I can get on a healthy plant-based diet for $50!! I did it as a single mom. I not only saved money at the grocery store, but in medical bills and medications.

You can do this. We can ALL do this. 💚

It’s been so fascinating and inspiring to experience how plants have completely changed me from the inside out…surpassing ALL my expectations. 💚

When I decided to go plant-based, one thing I did was swap out some of my go-to foods with vegan options.

Here are some of my faves:

Butter: Earth Balance Buttery Spread (perfect as a margarine substitute) and Miyokos Plant Butter (as a butter substitute). Both look, taste and spread exactly like butter.

Milk: Califia Brand Plant Milks - the Organic Unsweetened Almond Milk and the Gluten-Free Oat Milk are awesome, and have clean ingredients.

Ice Cream: My personal favorite is Talenti Dairy-Free Sorbetto in Peanut Butter Fudge or Roman Raspberry. Ben & Jerry’s and So Delicious are also amazing.

Cheese: Follow Your Heart for slices, Violife for shredded and Miyokos for block mozzarella, feta and liquid mozzarella (melts like conventional mozzarella in the oven.) Daiya makes a havarti block cheese that I really like, too. In terms of queso, we LOVE Good Foods brand Plant-Based Queso. It’s got really clean ingredients.

Sour cream: Kite Hill is our favorite, but we also use Tofutti when Kite Hill isn’t available.

Bacon: Our rice paper bacon recipe is SO EASY and SO GOOD. You can search the recipe at the top of this page. Lightlife makes a really good tempeh bacon as well.

Chicken and Fish: Gardein brand makes chick’n tenders and fishless filets that are straight up delish. Their Chick’n Scallopini is gluten-free, so I personally stick with that one. They also make turk’y cutlets that a lot of people love for Thanksgiving.

Ground Beef: Beefy Crumbles by Beyond are tasty and gluten-free, and have a great texture.

Burgers: If you like the taste of traditional burgers, I recommend Impossible brand. It’s gluten-free and tastes like a beef burger. My husband loves them. There are some healthier options out there, too. Dr. Praeger’s and Hilary’s are both brands my clients like.

Frozen Meals: In a pinch, Amy’s and Sweet Earth both have good options that are on the healthier side. My teenage son loves both brands.

Here’s the thing to remember when it comes to substitutes: switching over to these plant-based versions of some of your go-tos isn’t all you need to do to lose weight and get healthy. These options are healthier in than they’re cholesterol and hormone free, but a processed food is still a processed food. I teach women how to indulge in these foods while making whole, clean foods the bulk of their diet. 💚

Are you new to tofu?

Or maybe you’ve had tofu in the past, and you didn’t like it? Same here! I had it in college and thought it was the mushiest, most bland stuff ever. But the truth is, it’s a super versatile, super clean source of protein.

THEN I discovered extra firm tofu, and a little thing called marinating 😉. Delicious! My husband even loves tofu now.

You may have heard that you need a tofu press…I don’t have one and I do just fine! If it seems like your tofu is holding a lot of water, you can just press it between 2 glass plates for 5-10 minutes. Sometimes I put a small bowl on the top plate to speed the process. BUT, there are some super firm tofus like Cleveland Tofu that don’t need pressing at all, and I tend to buy those.

(Note: there are other types of tofu, like silken, that are good for soft dishes like quiches and puddings.)

And I have to say I really outdid myself on this recipe. It’s so clean. So easy. And the flavor is amazing!

This is a perfect lunch or dinner.

LORI’S TOFU ALMOND CRUNCH SALAD v/gf
(Makes about 2 servings)

For the Tofu:
1/2 block extra firm tofu, drained
1 Tbsp maple syrup
1 Tbsp tamari, aminos or soy sauce
1 tsp rice vinegar
1 clove garlic (about 1 tsp minced)

For the Salad:
1 1/2 cups cabbage (green or purple)
1 cup fresh greens (kale or spinach)
1/3 of a medium red pepper
4 or 5 baby carrots
1/4 large English cucumber
1/2 med green apple

For the Dressing:
Scant 1/2 cup raw almonds
1/4 cup spring water
1 clove garlic
1 inch ginger root, peeled
1 Tbsp tamari (gf soy sauce)
1 Tbsp pure maple syrup
1 Tbsp fresh lemon juice
1/8 tsp cayenne pepper

Putting it together:
Fresh avocado, diced

• Drain 1/2 block of tofu and dice into small cubes. Mix the marinade ingredients in a small bowl and add tofu. Stir, cover and set aside.

• Put all salad ingredients in the food processor and pulse 5 or 6 times. Put salad mixture into a medium bowl and rinse food processor.

• Put all dressing ingredients in the food processor and process for about a minute. Scrape down sides and process for another minute. Mix dressing into salad.

• Remove tofu from marinade put it in the air fryer on 400 degrees for 5 minutes. Stir and air fry for 5 more minutes or until crispy. (Timing will depend on the size of your tofu cubes.)

• Chop 2/3 of an avocado.

• Divide salad on to 2 plates, and top with avocado and tofu. Enjoy! 💚

Let’s talk about Alzheimer’s Disease.

It’s the most common neurodegenerative disorder in the world, and currently affects over 55 million people worldwide including 7 million Americans (we rank 8th in the world for highest rates of dementia.) That number is expected to jump to 150 million people by 2050.

This is an epidemic.

My grandma had it, and it was unbearable to witness. For those of you who don’t understand the disease, it’s not just about losing your memory of who you are or where you are. You eventually forget how to talk, walk, stand up or sit down, and eventually you don’t even know how to chew. It’s utterly devastating.

When I was little and before my grandma was diagnosed, I had only heard of one of person in our family who’d had it, and she wasn’t even a blood relative. Now, we all know someone or know of someone who has this terrifying disease. But the online info is confusing to say the least. For example, if you look up people least likely to develop Alzheimer’s, it says Asians. But China has the highest rates of Alzheimer’s in the world. A google search will also tell you that age or a certain gene is the main factor, and yet this society has always had older people and people with this gene. Rates didn’t start skyrocketing until 1979.

So what’s going on?

I mean, could it be that the fast food and ultra-processed food boom that began in the 1950s and 60s started us down this road? 🤔

But let’s back up for a sec. I mean, what IS Alzheimer’s Disease?

Well, it’s characterized by beta-amyloid plaque build-up in the brain that disrupts cellular communication. They see this over and over in MRIs of dementia patients…clogged brains.

High LDL cholesterol and saturated fat levels (hello there, animal products!), triglycerides, sucrose, and fructose levels (hiya, processed foods!) have ALL been linked to higher levels of beta-amyloid, as has a diet high on the Glycemic Index (high processed foods and low in fresh fruit, vegetables, whole grains and nuts/seeds).

But…they’re telling us age and genes are the problem?? Please.🤦🏻‍♀️

This insults our intelligence, people. Amyloid plaque builds up in your brain from the Standard American Diet and affects you more and more as you get older, resulting in worsening disruption of cell communication and worsening symptoms. That’s the bottom line. Once again, they’re doing everything they can to convince you that the SAD isn’t the problem.

Enter: Dr. Dean Ornish, president and founder of the nonprofit Preventive Medicine Research Institute in Sausalito, California, and a Clinical Professor of Medicine at the University of California, San Francisco.

In 2023, he completed a 5 month study which showed that:

EARLY STAGE ALZHEIMER’S CAN BE REVERSED. 😳

That’s right! In just 5 months, significant cognitive improvement was documented in the group who was on a whole food plant-based diet, exercising and meditating or doing yoga, while those in the control group (doing nothing differently) worsened.

And the best news? Those who kept up the regime CONTINUED to see improvement.

The prescription:
• Healthy plant based diet
• 30-60 minutes of brisk exercise 3x a week
• 1 hour of yoga/meditation per day

With these changes, study participants saw reversal of early stage Alzheimer’s symptoms in an average of 3 out of 4 cognition tests within 5 months!!

In another study, the amino acid L-serine was shown to be effective in protecting the brain against toxins that caused dementia. Guess what has high levels of L-serine? Tofu, edamame, sweet potatoes, chickpeas, lentils, walnuts, almonds and seaweed! By the way, blue zones get 3 times as much L-serine as we do in here America - and they live the longest lives with high vitality both mentally and physically.

The Alzheimer’s Association has reported on The Finnish Geriatric Intervention Study to Prevent Cognitive Impairment and Disability (FINGER). It was the first randomized controlled trial showing that it’s possible to prevent cognitive decline using interventions in:

• Healthy food
• Exercise
• Mental stimulation
• Social activities
• Cardiovascular health

This protocol is being implemented all over the world, where teams are testing the effects on diverse populations and reporting much success!

So, there you have it. Your fate isn’t left up to genetics or age, it’s about LIFESTYLE CHANGE.

You can continue to grow new brain cells at any age…or you can choose to eat an unhealthy diet, be sedentary, and sit in front of a screen until your brain becomes so clogged that you don’t know who you are and you can no longer function.

The bottom line is that physicians have an average of less than a week of nutrition training in their ENTIRE 8-10 years of education and internship. I’ve had clients sign on with me after being put on disastrous diets like keto by their own doctor, and then developing gout and worsening cholesterol and insulin resistance. The tide is just now beginning to turn, but not nearly fast enough.
