The first time I had kale, I was like… “So, I guess we’re eating weeds now.” 🤷🏻‍♀️😂 But have you ever heard of massaging your kale? It releases more nutrients, turns it a brighter, lighter green, and softens the texture so it’s more like the salad greens we’re used to. Just wash and de-stem your kale, rip or chop the leaves into bite sized pieces, add a touch of sea salt and a squeeze of lemon, and massage for about 60 seconds. I’ve made many a believer using this method and the Massaged Kale Salad with Dates, Apples and Pecans in my book! 💚

Happy Full Snow Moon! But wait… In Native American culture, the February full moon is often known as the snow moon because February is typically the snowiest month. But I saw an unexpected sight this week. See, March’s full moon is known as the Full Worm Moon. The ground is beginning to thaw, rains increase, and the full moon brings worms to the surface where robins come to feed on them. I witnessed it last year, in fact. And it’s the very event I happened upon while out in the woods a couple of days ago (see video, sound on.) It was unexpected and a little early, but such a blessing to see. There were hundreds of robins on the first floor! We may have more snow before it’s all said and done, but Spring is already on its way. All we have to do is lean in and enjoy the process of her becoming. That’s true for every transformation, isn’t it? ✨🌔✨

Once a year, my kids gather here at our house for whole the weekend. We hang out and visit, go to a huge Christmas expo, to our favorite Mexican restaurant, and then we have an early Thanksgiving dinner. Besides the wonderful memories made, I was so glad to “eavesdrop” on my girls as they talked about where they buy vegan ingredients and how they use them, and my granddaughter and oldest grandson tried tofu for the first time and they really liked it! I also stretched with my grandkids and played on the floor with them. I’m so happy I can be that healthy, fun Glammy for them 💚. Here’s my Thanksgiving plate…everything was vegan and gluten-free: sweet potato casserole, mashed potatoes, soy curls and country gravy over buttermilk biscuit, stuffing, veggies, green bean casserole, and cranberry relish. Not pictured: pumpkin pie and whipped cream! I love living this way. And I love that I’m planting seeds for my kids and grandkids for a healthy future.

Ready for a healthy and delicous answer to a common dilemma? Tofu Chick'n Nuggets! These are SO FREAKING easy and delicious!* 1 block super firm tofu, drained and broken into bite sized chunks* 2 Tbsp Nutritional Yeast* Scant 1 tbsp tamari (gluten-free sov sauce)* Scant 1 tbsp organic high heat sunflower oilIn a container with a lid, mix the seasoning, tamari and oil. Put in the tofu chunks, put the lid on, and gently shake til tofu is evenly coated. Air fry for 15 min on 300, stirring halfway through.Amazing! This makes about 3 servings and will keep in the fridge for about 5 days. 😋. My Almond Cake Batter Hummus... healthy, sweet and so yummy!1 can organic chickpeas, rinsed well3 Tbsp unsweetened plain almond milk1 Tbsp unsweetened creamy almond butter1/4 cup light agave nectar11/2 tsp Madagascar vanilla powder1/2 tsp almond extractPinch pink Himalayan salt (optional)• Mix in a bullet, or food processor scraping the sides down with a rubber spatula periodically.Blend til smooth and enjoy with fresh fruit!• Keeps in the fridge for several days.💚 #healthylifestyle #plantbasedrecipes #healthyallthetime #veganhealth #plantbasednutritionist #quickandhealthy
