Thanks to Thom of Poor Thom's Tavern, we got all the hive inspections done even with a broken ankle! We made some splits (will have nucs and queens available in June) and we will be back in stock with honey by late June!! Two more days, and hopefully I get a walking boot. Fingers crossed!

How does NH maple syrup get its taste? Through many factors!
Different flavors emerge from syrups sourced from various provenances, influenced by factors such as soil type and local weather, seasonal variations, and the specific boiling techniques employed.
During the heating and boiling phase, the chemical process called the “Maillard reaction” makes the amino acids in the sap react with its sugar, causing it to brown. This gives NH maple syrup its unique flavor, color, aroma, and antioxidant properties!

Our homemade food-safe board butter consists of 2 ingredients: locally-sourced beeswax from Black Dog Bees & Maple Trees and jojoba oil from The Original Jojoba Company 🐝 All of our boards are finished with the board butter to help seal and protect them. We recommend conditioning each board every 4-6 months - depending on how frequently the board is used.🐓

that around 300 different natural flavor compounds have been found in pure NH maple syrup? Though not all in the same syrup. A compound linked to maple flavor is present in all pure NH maple products but varies in amount between producers and time of year. Other prominent flavors are sugar, caramel, and vanilla. Nutty, buttery, floral (honey), cereal, chocolate, and coffee flavors can be found in some syrups.

NH maple flavor is affected by soil type, tree genetics, weather conditions during the maple season, time during the season when the sap is collected, and processing technique? That’s a lot of factors!
