Yesterday we went to a SF Giant’s game and I’m all about how can one eat healthy while eating out.
This was at a small bar next to the stadium.
Here you see I ordered the Quinoa breakfast bowl. It was yummy and satisfying. I always say eat until you’re 80% full.
Why is quinoa so good for us?
- Quinoa is actually a seed but we eat it like a graim because of its taste and texture.
- It’s very high in fiber and a complete protein that has all 9 essential amino acids that our body needs.
- Not only a good source of fiber but also iron, magnesium and phosphorus.
- Quinao is also gluten free
- Great for diabetics
In a single cup (185 grams) of cooked quinoa:
Calories: 45
Carbs: 11 grams
Total fat: 0 grams
Fiber: 2 grams
Protein: 2 grams
Potassium: 13% of the RDI (Recommended Dietary Intake)
Vitamin C: 14% of RDI
Vitamin K: 62% of RDI
Magnesium: 10% of RDI
Manganese: 12% of RDI
Quinoa is great as a carb substitute and is very versatile.
I love to add garlic olive oil to it or other spices like turmeric, lemon pepper, cajun spice and more. You can also have it in a salad.
Because it’s high in fiber you’ll feel fuller for longer.
Musn’t forget the avocado which is also high in fiber, delicious and has your omega 3 fatty acids which we need in our diet. Omega 3 fatty acids are good for our brain to keep it healthy.

Why?
Broccoli contains Sulforaphane, a plant compoud found in cruciferous vegetables that may have potent anti-cancer properties.
-One study showed that Sulforaphane reduced the size and number of breast cancer cells up to 75%.
-Another study done on animals found that treating mice with sulforaphane helped kill off prostate cancer cells and reduce the tumor volume by more than 50%.
Even more potent are broccoli sprouts. Broccoli sprout are just baby broccoli.
1 ounce of broccoli sprouts = 1.5 pounds of mature broccoli
You can find broccoli sprouts in health food strores like Whole Foods or it's easy to grow them. Just buy the seeds and grow them yourself, similar to alfalfa sprouts.

Here’s what my health coaching addresses for individuals:

I believe in fostering lasting positive change through small doable habits so it’s crucial to address the what, why and how.
Yesterday I participated in the Minority Mental Health Resource Fair bringing awareness to EMFs, why we need to care and ways to reduce and counteract the harmful affects.
Here I’m doing muscle testing showing how EMF’s are making us weak when we have our cell phones up to our ears.
EMFs (Electro Magnetic Fields) are emitted from wireless devices like cell phones, laptops, 5G, smart watches, smart meters, etc… deleting our energy down to the cellular level.
People who are sensitive to EMFs can have migraines, fatigue, brain fog, anxiety, and more.
It’s important we know how to reduce our exposure and counteract the harmful affects since we live in a sea of EMFs and ther’s no way to escape them.
Children absorb more of the EMFs than adults since their bodies aren’t fully developed till they’re 25 years old.
They absorb 2-3xs more in their brain and 10xs more in their body.
Some ways to reduce your exposure:
- Limit your wireless devise usage
- Don’t put your cell phone to your ears when talking
- Put your phone away from your bed. If you must have it next to you put it on airplane mode
- Move your router to a room that’s less frequented or used
- The last solution and one that I use is wearing Magnetude Jewelry with Neodymium magnets (strongest on the planet). It counteracts the harmful effects of EMFs while giving me more energy, helps with bloods flow, increases my good hormone serotonin for better mood, and helps with inflammation.
My Story
For most of my adult life I can remember never really being satisfied with my body. I was bombarded with ads, magazines, social media, TV and billboards portraying images of models and celebrities which made me feel (and I’m sure many girls, young teens and women) that being skinny or slim was how we should look.
Media would also be overwhelming us with this diet and that diet, this cleanse and starving ourselves to try and look like the women in the magazines and TV and that was the “acceptable” way to look.
Diabetes, high cholesterol & blood pressure, and cancer run in my family, however I never knew how to live a healthy life other than stay away from the sugar and carbs and just eat less. I was never really told why and how foods worked in my body or how they could prevent disease from forming and what types of foods I needed to eat.
I had gestational diabetes when I was pregnant with my son and pre-diabetes two years after and all the specialist could tell me was to exercise more and cut out sugars and carbs and if I couldn’t keep my blood sugar down I’d have to start on medication.
It wasn’t until I was in my mid 40’s that I met a nutritional chef and health coach who gave a presentation on health & nutrition. I had no idea that she would change my life. What I heard in her presentation was enough to get me interested in learning more about health and nutrition. I knew that eating healthy was the way to go but I never knew what to eat and how eating the right foods could help me prevent disease or how eating certain foods could feed disease. I always thought to be healthy was to eat boring salads and cutting calories. Boy was I wrong. I attended many of her talks and each time I would be educated and educate myself through my own research and thirst for knowledge which was the catalyst that started my path to achieving my health. This was the information that I had longed for all my adult life (although I didn’t know it) and what was missing for me. Understanding nutrition and flooding my body with the right foods made me feel amazing with more energy, less bloating, a whole lot more confidence liking my body and the assurance that I am fueling my body and preventing disease WITHOUT starving myself. It also seemed easier to do contrary to prior beliefs.
Going through life not knowing or getting the wrong information from all the media avenues is very overwhelming and discouraging. Going from diet to diet isn’t sustainable and always hating my body was no way to live.
Through my own experience with my health journey and being a parent advocate for my son when he needed it the most because of his lack of attention at shcool and home that affected his school work, personality, behavior, and relationships we were able to help him turn that around through a holistic approach. I feel compelled to help families and individuals understand how nutrition and a healthy lifestyle can affect all levels of health starting from childhood into their adult and senior years. This is why I decided to become a health coach because I know there are so many people out there that are in the same boat that I was in. I feel it my calling to make a positive change in their lives.
I received my Certification from the Dr. Sears Wellness Institute founded by world-renowned physician and author, Dr. William Sears. The Institute is a leader in science-based health and wellness education that focuses on the four pillars of health; Lifestyle, Exercise, Attitude and Nutrition (L.E.A.N.). A certification by the Dr. Sears Wellness Institute is obtained only after completing the extensive course work and meeting all requirements.
