Recipe: Mediterranean roast veg couscous wraps

Ingredients(serves 3-4 as a side):

1 large brinjal, chopped into 1cm discs
1 red onion, chopped into 1cm slices
2 medium tomatoes, roughly chopped
1 cup butternut, 1cm dice
1 cup spinach, washed and finely shredded
3 cloves of garlic, smashed
1 Tbsp dried herbs (oregano, thyme or mixed)
3-4 Tbsp olive oil
Salt & pepper to taste
4-6 Soft flour tortillas
1 cup cooked coucous
3-4 Tbsp Basil pesto
1 Log of goats cheese (optional)

Recipe:

First, preheat the oven to 220C.

Lay the butternut on a baking tray, drizzle with olive oil and salt and roast for 10-12 minutes until beginning to soften.

Remove tray, fold through the other veggies(except the spinach), additional salt, olive oil, garlic and herbs and replace in oven. Roast for another 15 minutes until veggies are softened and lightly caramelised.

Toss the veg with the couscous, shredded spinach and basil pesto in a large bowl. Mix well, taste and adjust seasoning if necessary. A squeeze of lemon juice can be added at this point.

Toast the tortillas in a hot, dry pan for 20 seconds each side and set aside.

Spoon the filling into the centre of the tortilla before dotting with the goats cheese(if using) and rolling up into a cigar shape. Tuck in the one side as you go.

Once all are rolled, serve immediately.

Sometimes you just want to munch on something light and fresh. This is the perfect recipe, and it is easy to make. Did we mention this is also a low-carb option? 😜

Recipe: Baby marrow fettuccini

Ingredients(serves 4):

500g baby marrow, cut into ribbons using a peeler
1 large pepper, cut into strips
2 leeks, whites only, chopped and washed
200g button mushrooms, sliced
2 cloves garlic, chopped
Chopped chilli, to taste
1 Tbsp dried oregano
100g feta, crumbled
Grilled or shredded chicken (optional)
2 Tbsp veg oil
5 Tbsp olive oil
Salt & pepper

Recipe:

First, prep the veg and set aside.

Next, in a large pan, heat 2 tbsp veg oil to high and add the mushrooms.

Fry with a pinch of salt until browned. Set aside.

Next, ad the olive oil and leeks and sautΓ© on medium for 4-5 minutes until leeks have softened, add the garlic and chilli and cook for another 30 seconds.

Next, increase the heat and add the peppers and mushrooms back.

Cook for 2 minutes with a pinch of salt.

Add the baby marrow ribbons and toss to combine. Cook on high for 30 seconds with the lid on the pan.

Toss through the dried herbs and feta. Add the chicken now too if using.

Serve and enjoy!

You simply must try this side dish! Getting ready to plan your Christmas feast? This could be a featured dish on your menu 😜

Recipe: Lyonnaise potatoes

Ingredients(serves 4):

600g baby potatoes
2 large brown onions, sliced
20g flatleaf parsley, chopped
2 sprigs hard herbs- rosemary or thyme
2 tbsp veg oil
2 tbsp butter
Salt & pepper

Recipe:

Cook the potatoes in salted boiling water until cooked through but not 'mash' soft.

Meanwhile, cook the sliced onions in a medium pan with the butter, hard herbs and a pinch of salt until very soft- about 15 minutes. Stir frequently- if they catch a little that's fine but you don't want them too heavily caramelised.

Once cooked and cooled, slice the potatoes in half and set aside.

Heat another large, non-stick pan, on high, add the oil and potatoes. Brown well on all sides- this will take around 15 minutes of frying.

Once well-browned fold through the softened onions, flatleaf parsley and a good pinch of salt and pepper.

Serve with your favourite roast.

Fresh, simple, quick, and healthy! Not sure what to do with your pineapples? This recipe will sort that out. It is delicious and versatile. You can tweak it any number of ways to suit the palates involved πŸ˜‰

Recipe: Carrot and pineapple salad

Ingredients(serves 4):

1 cup grated carrot
1/2 pineapple, cored and diced into 1.5cm pieces
1 large tomato, roughly chopped
2 tbsp raisins
1/3 cup of spring onion, finely chopped
10g mint, roughly chopped
10g coriander, roughly chopped
1/2 tsp salt
1/4 tsp cayenne pepper
3 tbsp veg oil
1/2 lemon, juice only

Recipe:

Soak the raisins in cold water for 20 minutes before draining and patting dry.

In a large bowl, toss together all the remaining ingredients and serve - easy peasy!

Looks perfect, doesn't it? 😍 And you can make this at home! This is an American classic, made with local, seasonal ingredients. Give it a try πŸ˜‰

Ingredients(serves 4):

1 medium butternut squash- cut into 1cm cubes
2 medium potatoes, washed and cut into 1cm cubes
1 bunch spinach, washed and chopped roughly
1 onion, cut into 2cm pieces
3 cloves garlic
Handful of parsley, roughly chopped
2 tbsp veg oil
2 tbsp butter
1/4 cup of parmesan or another hard cheese
Salt & pepper to taste
Fried eggs to serve- optional

Recipe:

Heat a large pan on medium heat, add the oil, the butternut, potatoes and a pinch of salt & pepper.
Replace the lid and cook for 10-12 minutes, stirring occasionally until almost cooked through and nicely browned.

Add the onion, spinach and garlic and increase the heat to high, add another pinch of salt.
Stir and cook for another 10 minutes until onion is softened and spinach is wilted.

Once all is cooked, finish with the parsley and parmesan cheese.
Toss and serve topped with the fried eggs.

This one is quick, tasty and versatile πŸ˜‹

Recipe: Curried sweetcorn and mushroom frittata

Ingredients (serves 2-3):

2 ears of corn- with the kernels carefully sliced off
1 brown onion, finely chopped
200g button mushrooms(or another type)- sliced
Handful of curly kale, roughly chopped
2 cloves garlic, chopped
2cm piece of ginger- grated
2 tbsp curry powder
2 tbsp butter
20g coriander- chopped
Salt & pepper to taste
Fresh chillli- chopped, to taste

For the frittata base:

8 eggs, scrambled
1 cup milk
100g cheese(any mild cheese will do), grated
Salt & pepper to taste

Recipe:

Heat a large, ovenproof, non stick pan on medium heat.
Add the butter, onion and a pinch of salt.
SautΓ© for 5 minutes until softened.

Add the garlic & ginger and cook for another 30 seconds.
Increase the heat to high and add all the other veggies with another k**b of butter, pinch of salt and pepper, the curry powder and chilli (if using).
Preheat oven to 220C.

Cook on high, stirring regularly for 6-8 minutes until the kale is tender and veggies are cooked.
Mix together the frittata base and pour into the pan.

Stir occasionally for 1-2 minutes until mixture begins to catch and cook.
Transfer to oven and bake until set- the cook time depends on the size of the pan.

There should be a wobble but not too much of one- approximately 8-10 minute cook time.

Remove from oven and turn out onto a board, sprinkle with the chopped coriander and serve with a salad or a simple sambal alongside a dollop of yoghurt.

πŸ˜‹ So bright and beautiful! We hope you enjoy trying out this recipe. This tart is super yum, summery and great for lunch with a side salad.

Recipe: Beetroot, leek and feta cheese tart

Ingredients(serves 3-4):

400g beetroot, boiled until soft, peeled and sliced into 1/2cm slices
3 leeks, whites only, washed and sliced into 1/2cm rounds
2 tbsp butter
2 tbsp fresh (or 1 tbsp dried) thyme, chopped
Olive oil, for drizzling at the end
1 sheet ready made puff pastry
1 scrambled egg- for brushing
150g feta cheese
Salt & pepper to taste

Recipe:

Preheat the oven to 200C
Roll out the puff pastry on a lightly floured work surface to 1/4cm thickness. Cover and refrigerate for 10 minutes.

Next, sautΓ© the leeks on medium heat, in a k**b of butter and pinch of salt until soft- about 8 minutes. Once softened, set aside until slightly cooled.

Lay the cold pastry on a lightly greased baking tray, scatter the beetroot slices and leeks evenly. Finish with a little salt on the beetroot and the thyme.

Brush the edges of the tart with egg wash- this will leave a lovely golden brown crust.

Bake for 20 minutes until the pastry is cooked and crust is golden brown.

Remove from oven, sprinkle feta and replace for 5 minutes.

Remove from oven, allow to cool slightly before slicing.

Serve with a side salad.

An OddBox Tale...

Our CFO (Chief Food Officer) Simon, a chef by trade, had grown tired of working in other peoples' kitchens. He took the leap and earned a coveted spot at a popular Cape Town market and began cooking his own creations. As a chef, he believes that you can’t make a quality dish without access to high-quality ingredients. Also a big believer in zero food waste, Simon brought this idea home with him and started selling his surplus fruit & veg that he sourced for the market to friends and family so that nothing went to waste. Pretty soon the word had spread and more and more people were asking Simon to help get them the same deliciously fresh produce at ridiculously good prices.

Simon began to ask himself why it's so difficult to get really great fruit & veg that doesn't cost an arm and a leg. He shared this idea with his friend Craig, who just so happened to know a thing or two about computers, and together they hatched a plan. They realised that by cutting out the middleman and going directly to the source, and taking the shopping experience online, they could make buying superior quality fruit & veg so easy you don't even have to get off the couch.
