We recently donated R183,250 to Ladles of Love, thanks to your support of our Pesto Princess soup range 🙌 When we handed over the big cheque, our Pesto Princess team helped cook and serve a nourishing meal to hundreds of vulnerable people in Cape Town.

‘’I was left with a culmination of emotions after volunteering at the soup kitchen but, above all else, I was deeply grateful for the life I have. I am grateful to be a part of a business that contributes to the incredibly inspiring work done by the Ladles of Love team. Spending the afternoon volunteering with my daughter and our team, made me 100% certain that introducing a night shift was the best decision for Pesto Princess, because now we can produce more soup and in-turn donate more to Ladles of Love!’’ – Anthea Govender, Head of Strategy & Projects

Weekend vibes + Chimichurri 🌶️

Dinner idea: aubergine bruschetta ✨

You’ll need:

1 punnet cherry tomatoes, diced
1 small red onion, diced
4 Tbsp Pesto Princess Basil & Chilli Pesto (plus a little extra to serve)
2 or 3 medium aubergines
2 Tbsp balsamic vinegar
2 Tbsp olive oil
½ cup grated cheese
Fresh basil leaves

How to:

1. Preheat the oven to 180°C. Mix together the cherry tomatoes, red onion, Pesto Princess Basil & Chilli Pesto, balsamic & olive oil.

2. Slice the aubergines lengthwise (approx. 1 cm thick). Brush with olive oil & season.

3. Spoon the tomato mixture over the sliced aubergines and bake for approximately 30 minutes. Top with cheese and grill.

Serve with fresh basil and extra dollops of pesto.
