A cosy, flavourful meal with roasted veggies and the goodness of almonds.
Ingredients:
For the pastry
75 g Montagu Raw Almonds
200 g cake flour
1.25 ml (¼ tsp) fine salt
5 ml (1 tsp) fresh thyme leaves
130 g cold butter, cubed
1 large egg, lightly beaten
30 ml (2 tbsp) cold water
extra flour, for dusting
For the filling
400 g butternut, cut into 2 cm cubes
olive oil, for drizzling
salt and pepper
5 ml (1 tsp) fresh thyme leaves
10 ml (2 tsp) butter
350 g onion (about 4 medium onions), peeled and thinly sliced
5 ml (1 tsp) wholegrain mustard
15 ml (1 tbsp) balsamic vinegar
50 g feta cheese
25 g Montagu Raw Almonds, roughly chopped
Method
Pulse the almonds in a food processor until finely ground. Add the flour, salt and thyme and process to combine. Add the butter and pulse until just combined, a few small lumps are fine.
Set aside 1 tablespoon of egg and add the rest to the flour mixture. Add the water and pulse until the dough starts coming together. Tip the dough onto the work surface and knead for a few seconds to finish bringing the dough together. Wrap and chill in the fridge while you prepare the filling.
Preheat the oven to 200º C. Arrange the butternut on a baking tray and drizzle with olive oil. Season with salt and pepper and sprinkle with thyme. Cover the tray with foil and roast for 20 min. Set aside to cool.
While the butternut is roasting melt the butter in a frying pan and add the onion. Cook over a low heat for 35-40 min until golden and caramelised. Stir in the mustard and vinegar, cook for another minute then remove from heat.
Dust the work surface with some flour. Roll the dough into a rough circle with a thickness of 3-4 mm.
Gently combine the butternut and onion and arrange over the pastry leaving a 3 cm border. Fold the border over and brush with the reserved egg. Crumble the feta over the top and sprinkle with almonds. Bake at 200º C for 30 minutes. Allow to stand for a few minutes before serving.

Method
Mix everything in high speed blender (keep half of the High Energy Mix for mixing in at the end for texture.)
Roll into bite size balls.
