We are obsessed with this wintery Pink Orange & Campari Marmalade, made by Georgia East of East After Noon 🍊 Beautiful bright Pink Oranges, a colour contradiction also known as Cara Cara, are exclusive to Checkers and are wonderfully sweet and juicy! This zesty marmalade will keep for 6 months unopened in the pantry or once opened, 4 weeks in the fridge.

INGREDIENTS:
1kg Pink Oranges
500ml orange juice
1L still water
1kg white granulated sugar
125ml Campari (optional)

METHOD:
1. Halve and juice the oranges, reserving 500ml of their juice.
2. Use a spoon to scrape out the remaining flesh and pith from each half.
3. Place the pith into a muslin cloth and secure with string. This will provide the pectin to set the marmalade.
4. Slice the orange peel into thin slivers and place into a large pot along with the orange juice, water and muslin bag.
5. Bring the mixture to the boil before reducing the heat and simmering, covered, for 1.5 hours or until the orange rind is soft.
6. Remove and discard the muslin bag and add in the sugar.
7. Set the mixture over high heat without boiling, stirring until the sugar has dissolved.
8. Bring the marmalade to the boil and cook for 30 minutes or until the marmalade has set.
9. Test this by dropping a little liquid onto a chilled plate - if the mixture wrinkles at the touch of your finger, it’s ready.
10. Stir through the Campari, if using.
11. Sterilise a few glass jars with boiling water and drain dry.
12. While still warm, fill with the marmalade and seal tightly.
13. Enjoy!
