Enjoy a fun recipe. Let's make easy Meatloaf!

Ingredients:
2 slices fresh white bread, crusts removed
500g pack minced pork
1 onion, roughly chopped
1 garlic clove, roughly chopped
Big handful of parsley
1 tbsp freshly chopped oregano or 1 tsp dried
4 tbsp freshly grated parmesan
1 egg, beaten
8 slices prosciutto

Method:
Heat the oven to 190C/fan 170C/gas 5. Put bread in processor and blitz to make crumbs, then tip into a bowl with the pork.

Tip the onion, garlic and herbs into the food processor and process until finely chopped. Add to the bowl with the parmesan and egg. Finely chop 2 slices of the prosciutto and add to the mix with some salt and pepper. Mix well with a fork or your hands.

Use the rest of the prosciutto to line a 1.5 litre loaf tin. Spoon in the meatloaf mix and press down well. Flip the overhanging prosciutto over the top, then put the loaf tin into a roasting tray.

Pour hot water from the kettle into the roasting tray to come halfway up the loaf tin and bake for 1 hr until loaf shrinks from the sides of tin.

Cool in the tin for 10 mins, then drain off any excess liquid and turn out onto a board. Cut into thick slices and serve warm or cold with salad.

No Bake Cheesecake

Ingredients for the cherry topping
1 cup pitted cherries, halved
1 tbsp pure maple syrup
1 tbsp fresh lemon juice
1 tsp water
1 tsp corn starch

Ingredients for the no-bake cheescake filling
4 ounces cream cheese, softened
2/3 cup plain full-fat greek yogurt
2 tbsp pure maple syrup
1 tbsp fresh lemon juice

Ingredients for the graham cracker crust:
1/2 cup graham cracker crumbs
2-3 tbsp butter, melted

Add all cherry topping ingredients to a medium saucepan over medium heat. Saute for 5-10 minutes, gently stirring every couple minutes. Eventually it will begin to thicken and form a sauce. You can mash up the cherries some if you like. Remove saucepan from heat and allow the cherries to cool while you prepare the cheesecake filling.

In a medium mixing bowl, add softened cream cheese, plain greek yogurt, maple syrup, and lemon juice. Mix together using electric hand or stand mixer for 2-3 minutes on high. When the mixture is smooth (there may be some little lumps) place in the fridge while you make the crust.

Melt butter in microwave. Add graham cracker crumbs to a small bowl and drizzle on melted butter. Stir until completely mixed together.

Distribute the crust mixture evenly into six 125mL mason/jam jars. Pack down gently with your fingertips.

Divide the cheesecake filling evenly amongst the jars. Gently tap jars down on your countertop to settle the layer. Top each jar with the cooled cherry topping.

French Toast Roll-Ups

Ingredients
Unsalted butter, melted
Granulated sugar
Brown sugar
Cinnamon
Eggs
Milk
Soft white bread
Maple syrup, for serving
Rolling pin

Method
In a small microwave-safe bowl, melt 3 tablespoons butter until just melted.

With a fork, stir in 3 tablespoons granulated sugar, 2 tablespoons brown sugar and 1 tablespoon cinnamon until a smooth spreadable mixture forms. Set aside.

In a shallow bowl, whisk together the eggs and milk. Set aside.

In another small bowl, stir together 2 tablespoons granulated sugar with 2 teaspoons cinnamon. Set aside.

Trim the crusts from each slice of bread.

Roll one slice out to about 1/8-inch thickness with a rolling pin.

Spread each slice of bread with a thin layer of the melted butter mixture and roll up tightly.

Repeat with remaining bread slices and butter mixture.

Christmas Cookies

Ingredients
3 ยพ cups all-purpose flour
1 teaspoon baking powder
ยฝ teaspoon salt
1 ยฝ cups white sugar
1 cup margarine, softened
2 eggs
2 teaspoons vanilla extract

Directions
Gather all ingredients.

Sift flour, baking powder, and salt together in a medium bowl; set aside.

Beat sugar and margarine in a large bowl with an electric mixer until smooth. Wrap dough; chill in the refrigerator for 2 hours.

Beat first egg into butter mixture. Beat second egg into mixture along with vanilla extract; add flour mixture and stir until dough is just combined.

Wrap dough; chill in the refrigerator for 2 hours.

Preheat the oven to 200 degrees C. Grease two cookie sheets.

Roll out dough on a clean floured surface to 1/4-inch thickness. Cut out shapes using cookie cutters; arrange them on the prepared cookie sheets. Gather scraps and repeat this step.

Bake in batches in the preheated oven until edges are golden, about 6 to 8 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

Pizza Bombs

Ingredients
1 (16 ounce) can refrigerated biscuits (such as Pillsburyโ„ข Grands!)
1/2 cup pizza sauce, or as needed
1/2 cup shredded mozzarella cheese, or as needed
1/2 cup pepperoni, or as needed
1/4 cup melted butter
2 1/2 tablespoons grated Parmesan cheese, or to taste
1 teaspoon Italian seasoning

Directions
Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.

Pop open the biscuit can and divide into 8 biscuits. Flatten each biscuit with your thumb into a 1/8-inch thick circle.

Spread the center of each circle with about 1 tablespoon pizza sauce, leaving a 1/4-inch edge open. Sprinkle each circle with about 1 tablespoon mozzarella cheese, and about 1 tablespoon pepperoni.

Pull up the edges of each circle to form a ball, and seal completely. Roll them in your hands to ensure the dough is sealed, then set each ball on the baking sheet seal-side-down.

Brush each ball with melted butter. Sprinkle with Parmesan cheese and Italian seasoning.

Bake in the preheated oven until golden brown, about 15 minutes. Serve with additional warmed pizza sauce for dipping.
