Rosemary and Olive Focaccia
Basic Bread Dough:
4 cups (600g) flour, plus extra flour for dusting
1 sachet (10g) instant yeast
1 tsp (5ml) salt
375ml lukewarm water
3 Tbsp (45ml) olive oil, plus extra for greasing
1 tsp SpiceMecca Rosemary

Topping:
¼ cup each black and green olives, pitted and sliced
50ml water
50ml olive oil

Method:
1 - Lightly oil a 30cm x 25cm baking tray and line with baking paper.
2 - Mix flour, yeast, salt and rosemary together.
3 - Mix water and oil together.
4 - Make a well in the centre of the flour mixture and add the liquid while mixing slowly to form a dough.
5 - Turn out onto a lightly floured surface and knead until smooth.
6 - Place in a clean bowl, pat with extra olive oil and place in a warm spot to rise until doubled in size (± 1 hour).
7 - Knock back dough.
8 - Cover base of prepared baking tray with dough and set aside in a warm spot to rest for ±15 minutes.
9 - Preheat oven to 200°C
10 - Poke dimples into dough using your fingertips.
11 - Sprinkle with olives.
12 - Whisk water and olive oil together and brush over focaccia.
13 - Bake for ± 20-25 minutes.
14 - Remove from baking tray and cool on a wire rack.
15 - Serve with good olive oil and balsamic vinegar.

Moroccan Koftas
Ingredients:
1kg mince
2 medium onions, finely chopped
3 Tbsp fresh coriander (dhania) chopped
1 Tbsp SpiceMecca Cumin Powder
1 Tbsp SpiceMecca Paprika Powder
½ tsp SpiceMecca Turmeric Powder
1 tsp SpiceMecca Ginger (Ground)
¼ cup olive oil
½ tsp SpiceMecca Chillies (crushed)
Salt to taste

Blend all ingredients together then shape into balls or place on skewers.
Fry, bake or chargrill.

Butternut Soup

Ingredients:
±1-1½ kg butternut, chopped
2 Granny smith apples with skin, chopped
2 Medium onions, chopped
6 Bay leaves
1 Tbsp (15ml) SpiceMecca Eleven in One Masala
½ tsp (3ml) SpiceMecca turmeric
2 Cubes chicken stock
±1 ½ L water
1L full cream milk
1 tsp (5ml) crushed garlic
2 Green chillies, ground – to taste
Salt and pepper to taste.

Optional:
250ml fresh cream

Garnish:
Fresh coriander
Garlic Croutons

Method:

1. In a large pot, place butternut, apples, onions, bay leaves, 11-in-1 masala, turmeric, chicken stock and water.
2. Cover with greaseproof paper and close the pot.
3. Sweat the vegetables on medium heat until cooked.
4. Remove the bay leaves, liquidise the vegetables and pour into a clean pot.
5. Add milk, garlic, chillies, salt and pepper and gently bring to the boil.
6. Switch off heat and add cream (optional)
7. Garnish with garlic croutons, & fresh coriander

Mother-in-Law's Mustard Chicken Recipe

Ingredients:
- 1kg chicken
- 2 onions, finely chopped
- 8 SpiceMecca cardamom pods
- 6 SpiceMecca cinnamon sticks
- 60g butter
- 2 Tbsp SpiceMecca Mustard Powder
- 1-2 tsp SpiceMecca Chilli Powder
- 1 Tbsp SpiceMecca Coriander Powder (dhania)
- 1 Tbsp garlic & ginger paste
- ½ cup black vinegar
- Salt to taste

Method:
1. Sauté onions, cardamom, and cinnamon in butter.
2. Make a paste with mustard powder, chilli powder, coriander powder, garlic and ginger paste, vinegar, and salt.
3. Marinate the chicken with the paste, then add to the onions and cook on medium heat for 40 minutes.
4. Remove the lid and reduce to thicken the sauce.
5. Garnish with fresh coriander.

Masala Fish Chutney

Ingredients:
5 Tbsp Spice Mecca South Indian Seafood Masala
1 tsp salt
2 Tbsp Oil
¼ cup lemon juice
1 tsp garlic paste
1 kg fish portions (cape salmon /kingklip/ yellow tail)
3 onions, finely chopped
¼ cup oil
1 can +/-400g diced tomato (preferably Italian) or 2 fresh chopped tomatoes
1 Tbsp tomato paste
1 Tbsp garlic paste
+/- 1 cup water
1 can of coconut cream/milk
1-2 tsp sugar
Fresh coriander

Method:
1. Make a paste with masala, salt, oil, lemon juice and garlic.
2. Use half of the paste to rub into the fish and fry lightly. Set aside.
3. Sauté onions in oil until golden.
4. Add reserved spice paste, tomatoes, tomato paste, garlic and water. Simmer for 15min on medium heat, stirring occasionally.
5. Add coconut cream and simmer uncovered for 10min.
6. Add sugar and adjust salt.
7. Turn down the heat to low and dish out half of the sauce.
8. Layer the fish in the pot and cover with the reserved sauce. Cook covered for 5min.
9. Garnish with fresh chopped coriander and serve with buttery Basmati rice.

Introducing our twist on a South African classic: Five Spice Milk Tart! Dive into a buttery crust infused with vanilla essence and orange zest, perfectly complementing the creamy filling. Baked to perfection and topped with a blend of our aromatic spices - cardamom, cloves, star aniseed, cinnamon, and nutmeg - this tart promises a burst of exotic flavours in every bite. Enjoy the rich tradition of milk tart with a spicy twist!

Five Spice Milk Tart
Ingredients:
400g flour
200g butter
100g castor sugar
2 egg yolks
2 Tbsp water
½ tsp vanilla essence
Orange zest of 1 orange
Egg white for brushing

Method:

- Cream butter, sugar, vanilla essence and orange zest together.
- Add egg yolks and mix well.
- Add flour and blend to form a soft dough.
- Wrap in cling wrap and refrigerate for ± 1 hour.

Filling ingredients:
14 egg yolks
140g castor sugar
1 L fresh cream

Method:

- Whisk together egg yolks and sugar until creamy.
- Add cream and blend.

Spicy Topping:
Blend together ¼ tsp each of the following ground SpiceMecca spices:
Cardamom, cloves, star aniseed, cinnamon and nutmeg

To Assemble:
- Grease a 30cm diameter loose bottomed tart mould.
- Line with pastry, pick with a fork and bake blind at 180° C for ± 10mins.
- Cool for 10mins.
- Brush the base with egg white and pour in the filling.
- Bake at 150° C for ± 35-40mins until set.
- Allow to cool and sprinkle with the spicy topping.
- Refrigerate for ± 1 hour

Crushed Baby Potatoes drizzled with hot and spicy tomato chutney.

Ingredients:
1kg baby potatoes, cooked soft
Olive oil
1 Tbsp Spice Mecca Chicken and Herb spice
Salt and pepper
1 medium onion. finely chopped
50ml olive oil
½ can (200g) chopped tomatoes
2 tsp tomato paste
1 tsp crushed garlic
2 green chillies, finely chopped (to taste)
2-3 Tbsp sugar (to taste)
Salt to taste
⅓ cup mayonnaise
½ tsp crushed garlic
a sprinkle of chopped parsley or chives

Preparation time: ±20 minutes

Method

1. Preheat the oven to 220°C
2. Gently crush each potato with the back of a spoon until it splits open.
3. Place on a baking tray and drizzle with olive oil, chicken and herb spice, salt and pepper. Bake for ±10-15 minutes until crispy and golden. Set aside and keep warm.
4. Braise onion in oil until golden.
5. Add tomatoes and tomato paste, stir and cook covered on a low - medium heat for 10 minutes. Stir occasionally to prevent burning
6. Add garlic, chillies, sugar and salt. Stir and set aside.
7. In a bowl combine mayonnaise, garlic and parsley. Set aside.
8. To assemble: arrange potatoes on a serving plate and dish the tomato
chutney over it.
9. Place dollops of mayonnaise over the tomato and garnish with extra parsley or chives.

Variation
1. Add a handful of fresh chopped basil to the tomato chutney.
2. Serve the potatoes in the baking tray, drizzle with tomato chutney and
mayonnaise and place under the grill to char slightly. Then drizzle with
parsley or chives.

Banana Muffins (12-15)

Ingredients:
3 cups cake flour
2 tsp baking powder
1 cup sugar
4-6 ripe bananas
1 tsp bicarbonate of soda
2 eggs
1 cup oil
1 cup Bulgarian yoghurt

Method:
1) Place flour, baking powder and sugar into a bowl. Mix well.
2) Separately mash together the bananas and the bicarbonate of soda.
3) Separately whisk together the eggs, oil and yoghurt.
4) Add the bananas and the liquids to the dry ingredients and stir with a spoon until well blended. Dispense into greased muffins pans.
5) Drop a teaspoonful of topping onto each muffin.
6) Bake @ 180°C for ± 20 minutes.

Topping:
1 Tbsp cake flour
3 Tbsp soft brown sugar
3 Tbsp soft butter
2 Tbsp honey or golden syrup
½ tsp ground cinnamon
1 cup chopped walnuts

Method for topping:
1. Blend the first 5 ingredients together to form a paste.
2. Stir in the walnuts.

Thai Butternut Curry
Ingredients:
1kg butternut, cubed
± 1 tsp salt
± 50ml olive oil
1 tbsp crushed garlic
1 tbsp crushed ginger
1-2 green chillies, sliced
1 tbsp green curry paste
± 1 cup fresh coriander
1 tsp SpiceMecca turmeric
3 onions, finely chopped
6-8 SpiceMecca curry leaves
± 50ml olive oil
1 cube chicken stock
½ cup boiled water
2 cups coconut milk

Garnish:
Chopped coriander
Toasted coconut

Method:
1. Place butternut in a roasting pan and drizzle with salt & oil. Bake at 200 ° C for ±30 minutes.
2. Blitz the following in a food processor, garlic, ginger, chillies, green curry paste, coriander and turmeric. Set paste aside.
3. Braise onions & curry leaves in oil until golden brown.
4. Add the paste and fry for 1-2 min.
5. Dissolve the chicken stock in water and add together with the coconut milk. Simmer in an open pot on medium heat for ± 20 min.
6. Add roasted butternut, stir to coat and garnish with coriander and toasted coconut.
7. Serve with fluffy basmati rice or pasta of your choice.

Ingredients:
1kg chicken pieces, washed and drained
1 onion, finely chopped
4 Tbsp oil
1 Tbsp garlic and ginger paste
1 Tbsp SpiceMecca coriander powder
1 Tbsp SpiceMecca chilli powder
1 tsp turmeric
1 can coconut milk
1 can chopped tomatoes
Zest and juice of 1 small lemon
± 1 tsp salt (to taste)
1 tsp crushed black peppercorns
500g green beans, halved
Fresh coriander

Method:
1. Braise onion in oil until golden.
2. Add garlic and ginger and all the spices - braise for a minute.
3. Add chicken and braise for a few minutes.
4. Combine coconut milk, tomatoes, zest and juice of lemon, salt and pepper, and add to the chicken.
5. Cook until almost done ± 30 minutes, then add green beans.
6. Cook for ± 10 minutes and garnish with coriander.
7. Serve with fluffy fragrant rice or roti.

Ingredients
1 can chickpeas, rinsed and drained
3 Tbsp Tahini
1 tsp crushed garlic
½ tsp SpiceMecca Cumin Powder
1 tsp salt (to taste)
Juice of ½ lemon
2 Tbsp olive oil

Simply blitz all ingredients together, decant into a bowl and drizzle with extra olive oil and a sprinkle of SpiceMecca Paprika. Chill.

Dhal Curry
Ingredients:
500g red lentils
2L water
2 chopped tomatoes
1 Tbsp SpiceMecca Turmeric
1 Tbsp SpiceMecca Chillies (crushed)
2 tsp salt
1/3 cup oil
1 tsp black mustard seeds
2 tsp SpiceMecca whole cumin
1 Tbsp crushed garlic
8-10 SpiceMecca curry leaves
Optional: sliced green chillies
Garnish: fresh chopped coriander

Method:
1.Wash and soak the lentils in water for 1-2 hours.
2.Boil the lentils in 2L of water together with the chopped tomatoes, turmeric, chillies and salt until it has a smooth consistency. Blitz.
3.Heat the oil in a saucepan and fry the mustard seed, cumin, garlic, curry leaves and green chillies for a few minutes, ensuring that the garlic doesn’t burn.
4.Add this to the Dhal, stir and add salt.
5.Depending on the consistency that is preferred, add a little extra boiling water.
6.Garnish with fresh coriander.

Chicken and Corn Soup
Ingredients:
1 pkt Knorr thick white onion soup
1 pkt Knorr cream of mushroom soup
1 pkt Knorr thick vegetable soup
2,5l milk
1 onion, finely chopped
¼ cup oil
± 500g chicken fillet, cubed
1 Tbsp garlic paste
Salt to taste
½ -1 tsp SpiceMecca white pepper
2 cans of cream style sweetcorn
Fresh coriander and green chillies, finely chopped

Method:
1. Place the soups in a large bow, add the milk and whisk. Set aside.
2. Braise the onion in oil until golden brown.
3. Add the chicken, garlic, salt and pepper. Cook for ± 10min.
4. Add the reconstituted soup and stir
5. Stir in sweetcorn and bring to the boil on medium heat. Stir occasionally.
6. Remove from heat and stir in fresh coriander and green chillies.
TIP: Add some extra milk if you want a thinner consistency.

Kebabs
Ingredients:
1 packet Spice Mecca Kebabs Spice
1 kg minced meat
1 onion (finely chopped)
1 Tbsp fresh coriander (chopped)
1 Tbsp garlic and ginger paste
125ml breadcrumbs
1 egg
Salt to taste
Wooden skewers

Method:
1.Blend all ingredients together (except wooden skewers).
2.Soak wooden skewers in water for ± 30minutes before shaping kebabs.
3.Alternate kebabs with slices of peppers, onions and dried fruit.
4.Lightly brush with olive oil then braai, grill at 180° C for ± 15 minutes, or pan fry.
5.Serve on a bed of savoury rice.

You will need:
500g SpiceMecca Flapjack/ Pancake/ Waffle QuickMix
2 extra-large eggs
2 Tbsp oil
500ml milk
1 tsp vanilla essence

Method:
Separate egg whites and whisk until frothy. Set aside.
Whisk egg yolks and oil until frothy.
Add milk and whisk.
Add the SpiceMecca QuickMix and blend well until there are no lumps.
Stir in egg whites and allow to rest for +/- 1 hour before use.
Heat up the Waffle maker and spray with cooking spray.
Add enough batter and cook until the steam stops and the waffle is golden brown.
Add your favourite toppings 😋

Have you tried Soji before? Soji is a rich, creamy decadent dessert 😋
A traditional sweet Indian dish loved by many ❤️

Enjoy 😉

Soji
Ingredients
500g butter
12-15 crushed cardamom
Saffron
500g Taystee Wheat
2 eggs
1 litre milk
1 ¼ cups or sugar
Pinch of salt
Garnish with flaked almonds

Method
1.Melt butter & braise cardamom & saffron in a pot with a lid that can be placed in the oven.
2.Add Taystee Wheat & braise until golden brown.
3.Separately beat eggs, milk, sugar & salt.
4.Add liquids to Taystee Wheat.
5.Cover & bake @ 180-200°C for 10 minutes.
6.Remove from oven & stir i.e. loosen from the sides of the pot.
7.Return to oven & bake @ 120°C for approximately 30-45 minutes.
8.Loosen with a fork & garnish with toasted almonds.
