🍅Hi Guys... Been a while. I found another bright spark idea, thought I would share with you guys.

Read the attached testimony of a Tupperware called "fridge mate." This container actually keeps the green herbs fresh for longer... Something we all need in our kitchens, especially with the rising costs of food. No1 enjoys throwing out the herbs when they dry out.

Air Fryer tips:

This is my new craze. Thanks to my son who is a very picky eater, fried chips is a stable in my home.
When I first used this air fryer, my chips tasted like plastic 🤢and wasn't even cooked although I followed the instructions religiously.

Tip 1: first use 1tablespoon lime/ 🍋 juice mixed with 1 tablespoon vinegar. Place it in the air fryer and allow a cycle of about 11 minutes. This actually coats the inside of your new fryer, dispelling any plastic fragrances. 😀

Tip 2: for the perfect Air fried chips. Just boil the cut chips beforehand. This releases the starch and allows a crispier fry... Don't forget to oil (1 tbsp) the chips after draining it, then place in the air fryer dish. PS: I still very lightly coat them in flour to increase the crispiness 😀😘

RECIPE:

Broccoli and cheddar baked potatoes 🥔

Ingredients:
4 medium potatoes washed well and dried
1 teaspoon Olive oil
3 & 1/2 tablespoon salted butter
1/2 cup Greek yogurt
1/4 cup buttermilk
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 teaspoon chives
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1 & 1/2 cup cooked broccoli - chopped
2 cups cheddar cheese 🧀 shredded

Method:
# Preheat the oven to 200° [depending on your oven settings]
# Line the tray with parchment paper and set aside
# Wash and dry potatoes 🥔 add a few drops of oil on the skins and poke few holes for even cooking.
# I like to bake my potatoes in the microwave oven about 5-6 minutes, checking with a knife if they soft and done.
# once done, cool them and slice in halves taking out the potato pulp from centre, being careful to leave the skins intact.
# rub a little oil on the skins again and place on parchment paper tray which was set aside earlier
# add the butter to the potato pulp and mash till smooth, add Greek yogurt, buttermilk, salt + pepper, chives, garlic powder, onion powder, paprika. Mix till smooth then add the broccoli and some cheese
# add this to each potato 🥔 half on the parchment paper and top with remaining cheese.
# bake in the oven for 20 - 25 minutes till the cheese is melted and potato is heated through.

The Perfect Veggie Foil Packet

First of all choose your veggies: mielies,🌽 butternut, onions, carrots, brinjal, baby potatoes, baby tomatoes, baby marrow, peppers, mushrooms..etc
Can either be cut in strips or leave it chunky 😋
Pick your poison! 👌😎

NB: best to boil / half cook your butternut, mielies and potatoes first, before adding to the foil.

# Melt the butter (garlic butter is always best) and mix through some herbs and spices.
# You can add a few spoonfuls of Chakalaka for extra heat
# Spoon some of the mixture over the foil and carefully place your veggies on top.
# Fold the foil up, leaving the top open and spoon in the rest of your butter before closing completely
# Braai on the coals until cooked
# Open just the top of the packet and sprinkle over grated cheese and return to the braai until the cheese melts.

Tip of the week:

When making fresh chips at home.
Cut up your potatoes, then coat with a thin to thick (according to your preference) layer of cake flour.
Then deep fry it on high to medium heat, followed by draining the oil out in a paper hand towel.
Season with Aromat or seasoning salt😍

Chips come out beautifully crisp... Say bye, bye to those soggy soft chips!

TIP OF THE WEEK :

Making a normal pan non - stick. 😳

All you got to do is add salt to the pan and fry it, shaking it about. Then after about a minute or two, drop out the salt and wipe the excess off with a paper hand towel.
This magic trick actually coats the pan, making it non - stick!
It's truely amazing... You got to try it out!

RECIPE

MOUTH WATERING - MAC & CHEESE

2 Tbsp. (30 mL) margarine
2 Tbsp. (30 mL) all-purpose flour
3 cups (750 mL) milk
1/4 cup (60 mL) shredded cheddar cheese (about 3 oz.)
1/4 cup (60 mL) grated Parmesan cheese
3/4 cup (175 mL) Hellmann's® Real Mayonnaise
1 1/2 cups (375 mL) elbow macaroni, cooked and drained
1/4 tsp. (1 mL) ground black pepper
1/4 cup (60 mL) bread crumbs


Method

1. Preheat oven to 350° F (180° C).
2. Melt margarine in large saucepan over medium heat and stir in flour with wire whisk / just a large spoon. Slowly add milk, stirring constantly with wire whisk. Bring just to the boiling point over medium heat, stirring constantly. Reduce heat to low and stir in cheeses until cheeses are melted, about 3 minutes. Stir in Hellmann's® Real Mayonnaise and pepper until blended. Stir in hot macaroni. Pour into 2-quart baking dish; sprinkle with bread crumbs.
3. Bake uncovered until golden and bubbling about 30 minutes.
