Grilled pork chops
Pork chops are easily overcooked and dry.
But these pork chops are marinated to make them extra flavorful and tender. A marinade will also help a pork chop from being dry. The marinade works to break down the meat and keeps it tender and juicy after cooking.
The best way to ensure you aren't overcooking your pork chops is to use a meat thermometer. Pork chops should be cooked to an internal temperature of 145°. There won't be any pink left when you cut into it! You can safely pull the meat off the grill at 140° and after resting for a few minutes, the meat will have continued to carry-over cook to the 145°. It's the best way to ensure your pork chop doesn't come out dry!
We recommend a cook time of 8 minutes per side, but ideally you are checking the temperature as each grill and pork chop is different. When buying your chops go for ones that are about 1" thick and boneless center cut. If you prefer bone-in those work well too.
Tips On Marinating
A good marinade will make a big difference in pork chops. Make sure your marinade has an acid in it to tenderize the meat and something flavorful. We use soy sauce to help with both of those things in our marinade. For some variations though you could use some dijon mustard and lemon juice, cilantro, olive oil, and lime juice, or balsamic and honey.
Ingredients:
1/4 c. honey
1/2 c. low-sodium soy sauce
2 garlic cloves, minced
Red pepper flakes
4 boneless pork chops
Directions:
Mix together honey, soy sauce, garlic, and red pepper flakes in a large bowl. Add pork chops then cover and refrigerate for at least 30 minutes or up to 2 hours.
Heat grill over medium-high heat and cook until seared and cooked through, 8 minutes per side. Let rest 5 minutes before serving.

Barbecue Pork, Onion and Apricot Kebabs
Ingredients
500 g pork rib eye, cubed
125 ml or 1/2 cup of tomato sauce
125 ml or 1/2 cup of orange juice
15 ml or 1 tablespoon BBQ rub
5 ml or 1 tablespoon coriander spice
1 red onion, quartered in petals
12 dried apricots
Method
Combine the marinade ingredients together and pour in a large rectangular dish.
Thread the pork, onions and apricots onto the skewers and coat well in the sauce.
Marinate in the fridge for at least two hours or overnight.
Once the fire is ready (but not too hot) place the kebabs on the grid and allow to cook, turning occasionally and brushing with the remaining marinade.
Serve garnished with coriander and an apple and cole slaw.

Spiced T-Bone Steaks
Because tommorow is , here is a recipe for the perfect spice rub for your t-bone steaks.
You need
tablespoons coarse salt
2 tablespoons white or brown sugar (optional)
2 tablespoons coriander seeds
1 tablespoon black peppercorns
1 tablespoon paprika or 2 teaspoons paprika plus 1 teaspoon cayenne
1 tablespoon garlic flakes or powder
1 tablespoon onion powder
1 tablespoon dried thyme
4 to 6 T-bone steaks, about 1 1/2 inches thick
Method:
Make the braai spice: In a grinder or mortar and pestle, grind all the seasonings and herbs until fine.
Rub steaks with the braai spice and set aside in refrigerator for 1 to 4 hours. Bring to room temperature before grilling.
Heat a grill until screaming hot. Place steaks on the grill and cook, turning every 2 minutes or so, until crusty outside and medium-rare inside, 120 to 125 degrees.
Let rest 10 minutes and slice across the grain for serving.
