At Izette Faul Dietitians, we're especially grateful for those who devote their time and energy to promoting health and nutrition. To mark this occasion, we want to share not only our appreciation but also a recipe twist that embodies the essence of vitality and nourishment. Our special Workers Day Recipe: Vibrant Veggie Stir-Fry Ingredients: 300g whole grain noodles or brown rice 400g assorted fresh vegetables (bell peppers, broccoli, carrots, snap peas, etc.) 300g lean protein of your choice (tofu, chicken breast, or shrimp) 20g fresh ginger, minced 4 cloves garlic, minced 60ml soy sauce or tamari 15ml sesame oil Fresh cilantro or green onions for garnish Instructions: 1. Cook 300g of whole grain noodles or brown rice according to package instructions. 2. While the grains are cooking, chop 400g of assorted vegetables and 300g of lean protein (tofu, chicken breast, or shrimp) into bite-sized pieces. 3. In a large skillet or wok, heat a small amount of oil over medium-high heat. Add the minced garlic and ginger, and stir for about 30 seconds until fragrant. 4. Add the protein to the skillet and cook until lightly browned and cooked through. 5. Next, add the chopped vegetables to the skillet and stir-fry for 3-4 minutes until they are tender-crisp. 6. Pour in 60ml of soy sauce or tamari, and toss everything together to combine. 7. Drizzle 15ml of sesame oil over the stir-fry for flavor. Serve the colorful stir-fry over the cooked whole grains, garnished with fresh cilantro or green onions.
