When making a sourdough starter, the real magic happens during the extended period of fermentation, which not only serves to unlock the nutritive goodness of the wholegrain, but it also neutralises the phytic acid found in the dough mixture. It is the phytic acid that inhibits enzymes needed for the breakdown of proteins and starches (gluten). The naturally occurring yeast and bacteria makes it easier for your body to absorb all the healthy ingredients in bread without triggering the symptoms of gluten intolerance.
