Ostrich (classified as red meat), is healthier than beef, and delicious when cooked rare-medium. You can eat it raw as carpaccio or steak tartare. Here it is served with creamy smooth potato mash, roasted leeks, garlic & onion, fresh asparagus, cabbage crumbs and powder. 🌿
