My interest in curing, pickling, preserving, and fermentation started in 2007 when I had the opportunity to work at a Thai restaurant.
The cuisine is entirely different to anything I did before or done after that. A lot of the food is either preserved (Sweet Chilli Sauce or Sriracha), fermented (Soy sauce, Fish sauce) or pickled (Cucumbers, mustard greens). One of the reasons for using these "cooking" methods, hundreds of years ago, is that there is not always refrigeration available and they needed a way of preserving their food
