Christmas Dessert
Classic truffle
Ingredients
2 madeira loaf cake
150g raspberry jam
200ml sweet sherry
400g fresh or frozen raspberries, defrosted if frozen
2 x 500g tubs fresh custard
200g tennis biscuits
600ml double or whipping cream
to decorate toasted flaked almonds
Method
STEP 1
Slice the cake in half lengthways and sandwich together with the jam. Cut the cake into 3 cm thick slices, then cut each slice into three so you get small rectangles of the sandwiched cake.
STEP 2
Use these to line the bottom of the trifle or glass dish. Pour over the sherry, and cover with the raspberries. Spoon the custard on top of the raspberries. Crush the tennis biscuits and add to the top of the custard, pushing some of them in a little.
STEP 3
Whip the cream until it forms soft peaks, add to the top of the custard. Cover and chill for at least 4 hours, or overnight if you can. Scatter with flaked almonds to serve.

Summer Cocktail
Stay cool this summer with refreshing strawberry margarita slushies. These fruity drinks are super quick and easy to make, a perfect crowd-pleaser.
Ingredients
500g strawberries, as ripe as possible, stalks removed
240ml tequila
4 tbsp sugar syrup/maple syrup
2 limes, juiced, plus frozen slices to serve
Method
STEP 1
The day before serving, tip all of the ingredients into a freezer-proof box, stir, and freeze overnight.
STEP 2
To make the slushies, tip everything into a liquidiser or food processor and whizz until smooth.
STEP 3
Divide the margarita mix between glasses and add a frozen lime slice to serve.
