Slow roasted (low temp) whole lamb leg, with constant basting, leads to the most succulent and juicy carved lamb meat! The clients couldn't get enough of the 'melt in your mouth' meat!

Finishing off a week of private lunch and dinners at a private Villa with a special Carribean themed menu that turned out to be the "cherry on to of the cake" for the client during a week full of gastronomical adventures and surprises!

My personal favorite is he papaya salad and beef patties and also the spicy jerk chicken and the most moist and soft tres leches!

Did you know that you can improve your health while helping the environment ? Drink CAMEL MILK !!

With more than twice the doze of vitamin C, higher amounts of phosphorus, zinc, iron, potassium and proteins than the more common cow's milk or even the less common goat's milk. It also has lower percentage of fat than the conventional milks and it is the closest natural milk to that of mother's milk.

Apart from the healthier formula for your body, camel's milk also has high levels anti-inflammatory properties and has the ability to improve the immune system, fight diabetes, promote growth and improve the heart!

Apart from the health benefits, it has a wonderful unique flavour and it is great in your cereals, protein shakes, cooking & to just drink as it is. You can also find wonderful camel milk creations in Dubai such as chocolates, ice cream and cheese.

And to top all of these benefits, camels need less grazing area compared to cows and goats and thus needing to chop down less trees and thus leaving the world a bit more green and reducing the amount of methane released into the environment! The RIGHT way to use Olive Oil.

One can often hear about the talk about the health benefits of extra virgin Olive Oil but is it always used in the right way? Could it perhaps harm you rather than doing any good?

The oil is indeed beneficial to one's health when used in moderation as it contains monounsaturated fatty acids (unlike saturated fats often found in animal fats). These fatty acids found in Olive Oil can actually help lower one's cholesterol levels and is therefore a 'heart friendly' oil.

Now comes the usage part. Olive Oil does have a lower smoking point (just around 190C to 200C) when heated. When the oil is overheated and starts to smoke, the chemical composition of the oil will change and experts have suggested that it can then produce substances that can be more harmful than beneficial. Although there are experts who argue against it as well.

Personally as a chef who enjoys olive oil, which is renowned for it's beautiful unique olive flavours, my recommendation is not to spoil it's taste. Use it on dishes that will bring out the flavors such as in salads, dips or drizzled over a wide variety of dishes including tapas, pizza and so on. Or when cooking I would certainly recommend to use it for light frying over low to medium heat so that you can still taste the beautiful flavors of this wonderful oil!

Enjoy using Olive Oil in moderation and know that a certain amount of oil in your diet is actually healthy and needed for your body.
