Our new Roasted Pumpkin & Israeli Couscous salad is a flavour sensation! This hearty salad is made with Israeli couscous, pumpkin and capsicum, spiced up with cumin, coriander, cinnamon and dukkah! You can find it in our Sumo delis at selected IGAs and grocers.

Need a healthy and simple dinner idea? Try this recipe, inspired by our Lamb & Haloumi Grain Bowl in store.

Ingredients // Serves 1
40g baby spinach
140g cooked brown rice & quinoa
30g Lebanese cucumber, diced
15g red onion, finely sliced
30g grilled haloumi
60g cooked lamb, sliced thinly
10g pine nuts
30g lemon dressing

Toss together all ingredients, divide between two plates and serve.

To make your own lemon dressing, put the juice of one lemon, 90ml extra virgin olive oil and some salt and pepper in a jar, then shake to mix.

Spice up your breakfast! As the mornings get cooler, why not try a chai-spiced quinoa porridge for brekkie? Simply cook quinoa according to packet instructions and mix in your favourite warming spices, like cinnamon and nutmeg. Top with yoghurt and granola for crunch!

Missing our grains and greens salad in store? Here’s a quick version you can make at home!

Ingredients // Serves 1
30g edamame beans, cooked
30g puy lentils, cooked
30g freekeh, cooked
100g kale, shredded
5g goji berries
60ml tahini dressing

Toss together and serve! Make sure you mix this one well, as the kale needs to soak up the dressing.
To make your own batch of tahini dressing, just put ½ cup of tahini, ¼ cup of warm water, a pinch of salt and a little crushed garlic or garlic powder in a jar and shake vigorously. This will make a big serve, so you can store leftovers in the fridge.
