Producer: German Ortiz Vargas
Varietals: bourbon aji + pink bourbon
Origin: Farm ā€œCerritosā€@1500 masl, near Bruselas, Huila, Colombia
Flavours: juicy and bright with flavour reminiscent of a lemon, lime + bitters cordial, coupled with mandarin

ā€œWeā€™re hugely fond of German Ortiz, and not just because of the goodness of his coffee. One of the founding producers of our deepest love ā€“ the feted Asoguacharos group ā€“ German offers increasingly delicious coffee from his several farms, while steadfastly fulfilling the treasurership function at the group, and offering up his home for group meetings and generally wearing the biggest smile in the room.

This time weā€™re proud to represent something from Germanā€™s January harvest, a variety that will likely become famous and ubiquitous any month now: in Spanish itā€™s ā€œborbon ajiā€, meaning bourbon ā€œchilliā€ (the latter mainly because the cherry ripens to the orangey colour of a habaneros).

This is the first harvest of this variety, planted 3 years ago on Germanā€™s second farm. Because the lot was so small, weā€™ve combined it with a pink bourbon variety from his primary farm (Cebeceras), where German also produces caturra and variedad Colombia. The ultimate lot is 70% bourbon aji, balance pink bourbon.

German ferments in cherry form for 24 hours, followed by 24 -36 hours in plastic drums.ā€
