AMARO OF THE WEEK /
Sweetdram Whisky Amaro is one of the more unique among our collection. It started life as a killer collaboration between Scottish liqueur house Sweetdram and New York-based distillery Kings County, the first American distillery to reopen after prohibition.
Now, using a blend of three scotch’s, including a heavily peated Ardmore, Sweetdram utilises botanicals such as allspice, cassia, lingonberry and rhubarb to provide a richly spiced and dried fruit-forward palate before honey collected from Edinburgh’s rooftops kicks in to provide a gorgeous sweet finish.

Last night we ranked #6 in the countdown of Queensland’s Best Bars at the Boothby Bar Awards, a brilliant improvement on last year’s 11th position. Every day, it is a privilege to be a part of Brisbane’s bar scene and we are blown away to place so highly in such a competitive list.

There’s always something on our menu for the conscious or non-drinkers among us, including house fermentations and non-alcoholic cocktails. We use Ovant Royal for something spiced and rich, making it ideal for non-alc riffs on classic cocktails such as Old Fashioned’s, Daiquiri’s and Whisky Sours. It’s only a matter of days before the red tape is cut on the inaugural Brisbane Bartenders’ Weekender by Boothby and we have a killer collaboration to throw into the jam-packed schedule!
Last year, Bar Bellamy was named the Best New Bar in Victoria by Boothby and also took home Small Bar Of The Year at the Australian Bartender Awards and we are so excited to have owner-operators Dani and Oska strut their stuff behind the stick at Before + After as part of this incredible weekend.
Oskani, as they have come to be called, will be pouring their crowd favourite Martini as well as a range of house cocktails thanks to our sponsors Vanguard, whilst our kitchen will be pumping out famed snacks like their deviled eggs and chicken liver parfait cannoli. All of this will kick off at 7pm on Monday, June 17th and is available to anybody and everybody on a walk-in only basis!

A great way to use up open fruit (citrus that has had the skin peeled off for garnish, or day-old wedges/slices) is to put in a vacuum sealed bag with sugar and let the bag do the rest. Two days later you’ll have a fully formed syrup with rich mouthfeel and vibrant mixed citrus flavour. We add a touch of citric acid to further brighten it and there we have a fruit cordial, or ‘tutti frutti’.
Combine it with the mint-forward notes of Full Circle botanical vodka, the citrusy florals of Geraldton wax and the juicy Amara blood orange amaro and you have a super bright, lively and complex fruit martini. Nice, huh?

This week’s showcased Amaro is Cantina Amaro Furlani, a delicious wine-based drop that is infused with blood orange, rhubarb, wormwood and gentian among others. Originating from Northern Italy, Furlani has all the characteristics of an Alpine liqueur - it’s woody, fresh, herbaceous and citrusy in equal measure.
Furlani is stunning alternative to Campari in a Negroni and equally as delightful as a simple highball with tonic.
