OK a quick update, new batch, 36 hours in...
(Only 5kg so wont last long)
This batch is lovely lean grass fed topside which I request from my supplier, my go-to always.
Few pics of before and during the prep stage, though we're looking at up to 7 days from start to finish.
The thin bite size sticks will be ready tomorrow while the regular Biltong takes about 5 days drying.
Popular favourites are Original and Chilli, and that's what we see here. Note: The Chilli is actually quite mild and my 10 year old is fine with it.
No Gluten Free today, but happy to do on request or will come up from time to time, so let us know if you require GF?

Also in this batch I'm trialing a new smokey flavour, just testing for now and will be available quite soon. Have added smoked paprika, cumin and few others exotic spices to give an almost north African blend. I'm calling it 'Marrakesh', after the flavours I discovered during my unforgettable Morocco trip years ago. I've thrown in a pic of the famous market (souk) in the main square.
Then my mate Jarrod suggested (requested) Wasabi Biltong, which I'm interested to give a run also. So watch this space.

Spectator sport, watching Biltong air dry. Takes about as long as a game of test cricket 🏏 5 days in the dryer.
Air sealed room, dehumidifiers running 24/7 (up to 2 units if it’s raining or humid).
The dryer has extractor fans and inlet fans, small incandescent bulb, UV and LED lights, temp readout and hygrometer for humidity.

I've got a soft spot for great food, I guess years working as a chef and in hospitality is testimony to that. Sublime food is something else, just getting there isn't always quick, easy, practical or healthy...
My original Biltong started both as a delicious carb free snack to quench my own appetite, and also for my son who's a very fussy eater with intolerances to food additives. Like most parents we understood a healthier diet equals less junk food, and healthier, happier kids... Biltong is exactly that...
As capacity has grown it makes sense to share this treat with friends, neighbours and community.
The branding for my biltong was going to be "for vegans who swing both ways" and to be honest it still may be. It's bloody awesome and gets the ‘wow’ from many people who have previously conceded to “have never tried” or “not much of a fan”. Try it for yourself!
It's 100% natural, additive free, pure protein (gyms, athletes, keto diets) and stores really well. Kids love it and it goes in my kids’ lunch box every day, his school mates just as keen also.
