The sweat this humidity is supplying is multiplying so we got our hearts set on some sexy new cocktails.

If you know us, we love a good nod to the Newstead story and our ever changing cocktail menu is exactly that.

11 years is a bloody long time and we have a list as long as the cast of Grease to choose from. So we are bringing you the beers that got you all talking.
The collabs, the crackers and some of the absolute abominations too (we get jokes).

This latest list brings you -

🐟21 feet 7 Inches Stout Syrup Espresso Martini. A nod to the original Porter and the height of the floods in ‘74.

🍍Milk and Two Pineapples Tequila Jungle Bird. A nod to the Collab of years past.

🦅The Sour Falco Tropical Punch Daiquiri. A nod to the Collab we frothed over.

🗿Mod World Gin and Cucumber modern twist on a Mojito. A little throwback to one of our original boundary pushing IPAs.

🍹The Naked Lunch Negroni Spritz. A real punchy number and nothing like the mango sour Collab we threw out there. Still a cracking name for a cracking lunch time cocktail, so I’ll run with it.

Were shaking it up like Travolta over here. Come and make us dance!

“we have a thirst for good beer and knowledge”

These pretzels are making me thirsty. It’s a hungry kind of week.

The science behind beer and food can be as complicated or as simple as you wish to make it.

While you can choose whatever you want to put in your faceholes while sipping down a delicious bevvie (ice-cream on your steak, who are we to judge?), there is a method to the madness of perfecting a food menu in a brewpub.

We’ve already discussed the proteins in our Two To The Valley WCIPA and how they act like milk with Chili (perfect with Buffalo Wings), so you get the idea that some things work on a scientific level, but there’s more.

Sauerkraut and lagers are perfect as the Sauerkraut is salty and tangy. The maltiness of German lagers and the slight salinity really balance out this savoury tang. It’s the perfect compliment. Tropical Pale Ales with salty chips, also perfect. Stouts with oysters - nailed it. Beer and Cheese or Beer and Salt = friends.

In case you didn’t know, we have a new Head Chef Casey, and is a weapon with beer food! He gets it with his incredible Rocky Mountain inspired cuisine.

He makes almost EVERYTHING from scratch using our very own beer to do it.
Beer Pretzels? - Two To The Valley for flavour and colour.
Beer Mustard? Japanese Lager and Zoo Golden Sours for complexity.
Dark Vinegar? 12 feet 7 inches (yeah he made a vinegar using our porter).
Beer Batter? Coastal Hazy Pale for a hint of tropical notes.
Beef Dip Jus and our house Gravy? Japanese Lager
Yeah you read that right. BEEF DIP! HOT DAMN 🤤

The list goes on. The pickling, the sauces, the basting of the meats… all house made with our beer. It’s the perfect marriage of flavour, technique and craft.

We still have mains (if you fancy a steak or ribs dripping in our house made BBQ sauce) but if it’s not our poutine or pretzels, it’s our burgers and sandwiches you are gonna come back for. We even have solid options.

This full collection of our canned Zoo series is as endangered as a white Rhino and I’m pretty sure this photo contains our very last can sighting of Zoo V8.

Thankfully the cloning continues and our mixed culture is safe and secure in its enclosure.

Our ancient mixed culture Zoo Program is the only Zoo program we will support and we promise you, no animals we ever harmed in the making of this series (unless you count us and our livers 😏).

It’s German for double release!

There’s a little place we’re West Coast hops are delivered over a clean and crisp Pilsner base, that’s where we want to go.

A super snappy Pilsner, fermented low and slow, was dry hopped with Amarillo, Citra and Strata to give pine, orange citrus and tropical hop notes, with a focus on drinkability.

We’ll get there fast then we’ll take it slow.

Run yourselves into the Milton Brewhouse to grab yourself a fresh Kokomo, sit down, relax and take it as slow as you like. We have all day.

Bring ya dog. Bring ya empty belly’s and feast on our lager friendly Oktoberfest menu.

🍺🥨”oktoberfest lager balloons”🥨🍺

When the prince Ludwig married Therese in 1810 they released 99 air balloons. These were mistaken as UFOs by the Airforce, who gunned them down. Ludwig was outraged and forbade lager production until his death in 2024.

This Festbier is about as authentic as that story, but it is made with similar ingredients to real beer, we promise. German Pilsner malt, with noble hops, lagered for two months. A super crisp and clean Festbier, ready to celebrate with balloons*.

It’s all kicking off this weekend! A fully inauthentic Oktoberfest menu of delicious authentic German inspired food to drink German inspired beer to. Authentic! You know, like releasing 99 balloons into the sky… to celebrate lager!!!! Wooooo! LAGER!!!

Not a lot of this makes sense. But drinking good beer and eating great food does!

Available in cans to take with your Lederhosen to that Oktoberfest party your mate always hosts and serves up some weird sour cabbage at.

OKTOBERFEST!

Remember the days when your mum would say things like “if everyone else jumped off a cliff, would you?” and “don’t put someone else’s food in your mouth”?

Well sorry mum! It’s Oktoberfest and everyone else is doing it so we are too! Also our Pretzels are bloody delish and if you aren’t watching, we will eat them all!

October 5th through to October 20th (yeh, almost a whole month) of awesome German inspired food to drink beer to (and watch this space for a sneaky limited release or 2 to pour responsibly into your mouthholes).

It means you can go to all the other Oktoberfest events in Brisbane without missing out on impressing your new date with your “I can devour 1.2kgs of crispy ham hock on my own. Watch me!”. Or you can share it and really impress them.

See you for aaaaallll the German songs, salt, beer in weird vessels and lederhosen* you can poke a pretzel at.

You can have it on the couch or even at your makeshift desk that was once your dining table because those reports won’t write themselves. You can absolutely have it on a stand up paddle board you probably shouldn’t be attempting in your 40s for the first time.

You can have a delicious, hand crafted, independent, cold, crisp, full flavoured craft beer made by us, in your hand. Matter of fact; I’ve got one now.

From the little fridge that could in our Tasting Room at Milton, you too can grab a mixed slab (because we are millennials and indecision is life) and pipe down.

Get em to go! Unlike balancing on a stand up paddle board and doing your reports from your dining table, it’s really easy.

Check our opening hours, but takeaway trade is allowed from 10am - 10pm ✌🏽

The only good kind of Zoos are the ones that rehabilitate, regenerate and taste like an incredible 10yr old mixed culture program.

You’ve heard us ramble on about how we are QLDs oldest dedicated mix culture craft beer program probably more times than you’ve been to an actual Zoo (you’re welcome); so we’ve decided to hammer you even further and opened the pen with 3 new gems.

About as special as a Southern White Rino, these 3 vintages are knock outs.

V-15 Barrel Fermented Wild Golden Sour - a pale base fully fermented in barrels.

V-16 Wild Golden Sour - same base beer, stainless ferment with secondary development in barrels.

V-17 Apricot Flanders - A gorgeous golden sour blended with a 3yr aged sour red and finished on real apricots.

All 3 perfectly balanced bangers are roaming freely at all good independent bottle shops, our very own brewhouse and if you’re lucky, on an awesome camping trip with your family.

The OG Brisbane Westie is up against a host of exceptional SE QLD IPAs, to see who can supersaturate Columbus in the most tantalising fashion.

Unsubscribed from the anthology of Pikachu, Old Toot T***s accepted its evolution and has seen a cascade of iterative updates. Now more late hopped, dry hopped, post-fuge hopped and hopped hopped than ever before. With less bitterness, and just a touch of toasted malts, drinkability is the focus, not forgetting the same middle fingers (sic) to corporate, bland swill (and Easties).

Come vote for this kicking, Raichu-approved Westie, or one of the 18 other killer IPAs, or even the one from Working Ticket.

Clarity and stability - like your tinder profile only beeryier!

Clarity matters, especially in craft beer. We drink and eat with our eyes first and while we have all survived and even enjoyed a can or two of chungus (aka colloid formations) in our time, clear and stable is what we are truly looking for.

As a hop forward craft brewery (and a small family owned one) we really care about reducing waste and getting the most out of the quality produce we use. When you consider that 1kg of hops soaks up about 10ltrs of beer liquid, it’s really important that we don’t lose a heap of that tasty beer juice while also ensuring we don’t leave behind any solids left behind by things like oats or dry hops from the mash or yeasts from the ferment.

Colloidal stability is when the proteins and polyphenols in beer are interacting well and creating a balance of texture, clarity or haze and not chungus. Unstable colloids and yeasts left in your beer, can overtime, result in re-fermentation, volatile flavours and degradation of the beer.

In our little brewery that could, we gain clarity and colloidal stability, using a pretty special piece of kit called a centrifuge.

How does it work and what about the beers you want haze in? It’s why it’s an art! For example, we spin all our beers for clarity and stability. Tooters goes super fast because we want all the hop profile and awesome malt character with a clear as day finish and we spin Coastal a little less fast to remove the proteins and solids we don’t want to keep, maintain that perfect haze while also ensuring colloidal stability. Even our porter get a go so it’s a stunning slight ginge tinge for you. Just for you!

Beer is fun! We hope that “clears” things up for you…. I’ll see myself out.

🍱 🍺 Bungfest Food Menu Drop 🍺 🍱

Food and beer, they go together like peas and barrel aged carrots. You just can’t drop 24ish exceptional beers without pairing them to delicious eats.

This Saturday we’ve gone a little bit psycho on the menu, because Bungfest. The most important part of Bungerz is, after all, the food.

Paddles of oysters, house-made donut holes, and sliders have all been paired to go with the beers. Or you can purchase any of them separately.

We are also running meat, charcuterie and grill specials all day.

Aaaand a sneaky beer spider bar, pairing three beers to local, handmade ice-cream will be running all day.

Come for the beer, sober up with some food, stay for some more beer.
