Did you know that cholesterol in your skin converts to vitamin D?
When sunlight hits this tiny molecule it converts it to vitamin D that your body then uses to create strong teeth, bones, and immune systems.
So why do we fear both of these parts of life so much?
The issue is that we’ve completely misunderstood what cholesterol is. Dietary cholesterol is a small molecule that is a very important precursor for s*x hormones in the body.
It is also the precursor in the skin for vitamin D.
The problem lies with a complete misunderstanding of the term 'cholesterol'.
When we say blood cholesterols, that is actually referring to the larger molecules that carry all fat soluble vitamins around the body (including vitamin D).
Cholesterol is a tiny molecule that helps bind these 'carrier' molecules together.
Then there's the tiny fact of when sunlight hits cholesterol in the skin, in begins to convert into vitamin D.
Recently, the misconception that cholesterol purely causes heart disease has been challenged.
When cholesterol is implicated in causing cardiovascular problems, it is not the lipid itself that is the culprit, but rather the lipoproteins that carry cholesterol to and from cells. Broadly, these can be categorized into two groups: high-density lipoprotein (HDL), colloquially referred to as good cholesterol; and low-density lipoprotein (LDL), or bad cholesterol, that clogs arteries and increases the risk of heart attacks.
High denisity (HDL) and low density (LDL) lipoproteins are just part of the cycle the liver sends out to deliver fat soluble vitamins (including choleseterol) to the rest of the body.
They exist in high or low density forms and having more of them isn’t necessarily a bad thing.
The more important ration to measure are blood triglycerides which are single fat molecules floating through the blood. The ratio of triglycerides to HDL (High density lipoproteins) is potentially a far better marker of risk of heart disease which are raised from sugar consumption.
The take away is that today we should really see cholesterol as a part of the diet that is critical for a healthy heart as well as bones and teeth.

Sugar can be just as harmful to health as alcohol.
One argument for eating less meat is the idea that the Mediterranean Diet is low in animal fats.
Yet, if you go to one of these countries (there are many), you see a diet that is based, like all other human diets, on well sourced, high fat, nourishing animal based foods.

If salami is the blog of cured meats, then prosciutto is the great novel. A salami requires anywhere from 20 to 120 days to cure, making it popular with chefs who want to put their house-made stamp on a rustic appetizer.
But the best prosciutto requires 8 to 24 months to transform the salt-covered hind leg of a pig into a $35-per-pound luxury, a rosy meat that, when thinly sliced, is a complex, faintly salty delicacy that dissolves into richness on the tongue. It is nothing short of a miracle.
Traditionally the legs are hung after the November slaughter and left to mature throughout the seasons. Careful attention is paid not only to the breed and weight of the pig but also to the way the leg is b***d and trimmed, the type and amount of salt applied and the aging, cleaning and sealing processes, all of which must be undertaken at just the right time, under favorable temperatures and humidity.
It takes skill to ensure the meat doesn’t rot; texture and flavor require artistry. Today in Parma, Italy, there are schools and trade groups dedicated to the science of the ham. Knowledge aside, you still have to wait an awfully long time before you can taste if what you’ve made is any good.
Is the Mediterranean Diet a myth? It is in the sense that it's low in animal fats.
The people here lived long healthy lives due to this understanding, as well as some sunshine and olive oil.
