At this time of year there’s a glut of broadbeans. They have a bland flavor. Which is not a bad thing because that means you can add them to a wide variety of different dishes and go town with your herbs and spices. Such as burgers, , salads, dips, stir fries and curry. So tonight we having broadband curry with yellow rice.

Pick a beetroot and wanted to try something new with the beetroot leaves ( a great substitute for spinach). Collected a spring onion and some chili’s from the garden. Made some pakoras - super easy. Served with tamarind chutney. Delicious snack.

Makes you think, doesn't it? Even if we can't grow all our own food, we can support local producers. Always check to label to see where a product was produced. The other day I was comparing 2 tins of peaches - one produced in Australia and the other in China. The one from China was cheaper but at what environmental cost? And we do not know the quality of the land or what levels of contaminants, pesticides, herbicides used in production. Important to make the best decision for your health.

Had fun preparing a Sunday Roast! Good to maximise the use of oven - here we have roast veggies, kumara baked in orange juice, oven baked falafel and eggplant. Followed by our favourite rhubarb and apple crumble.

Cookie tins filled with choc chip cookies and oat crunchies. so easy to veganise your baking when you know how. While these would not meet the 5star health rating they are definitely an improvement on store bought cookies which are high in trans fats and other "baddies". The cost savings are also significant and there's no beating the taste of home made cookies! By doing a couple of batches at a time you maximise use of the oven. And kids do love a treat.

Yesterday was such a perfect sunny day, who wants to spend time indoors cooking? So I threw together this quick abundance bowl using leftover quinoa, a spicy peanut dressing and selection of veggies in the fridge. So quick and easy, and very economical. A buddha bowl from the local café could set you back $12-15., whereas using produce you have on hand costs just a fraction of that. Tip; always a good idea to cook extra beans / rice / quinoa or other grains and keep in fridge / freezer for quick meals like this.

Thick, rich veggie soup for a cold winters day. Very simple - just scratch around in garden, fridge and pantry for some basic ingredients, chop up in small pieces and cook. Fresh herbs and greens from garden add lovely taste. Served with home made seed bread. Cost ~ $1.50 for 4 large bowls.

Todays meal. Homemade take out. Red bean and quinoa burgers with fresh homemade rolls. Served with lettuce, beetroot relish and caramelised onions. Potatoes from a local farmer. Beetroot and lettuce from the garden. Total cost Less than $1 a serve. Buns, burgers and chips all baked in the oven at the same time to save time and energy. A high carb meal but well deserved after a week of hard toil in the garden!

Laksa - super easy meal with tofu, laksa, noodles, bok choy and sprouts. Cost ~ $3/person. I cheated a bit as the sprouts were store bought. Next time I'll be better prepared and sprout the mung beans in advance. Another expense was the lemon grass @ $3/ 10g. Fortuitously a friend gave me a plant today so that will be a major saving in future. Peas, bok choy and spring onions from the garden. Did you know bok choy is super easy to grow especially this time of year when there are no cabbage moths. Great thing about vegan meals, so many versatile choices.

Tuesday night dinner. Sweetcorn fritters. and sides using up the last of the summer harvest - green pepper, jalopeno and greens from the garden. Green tomato relish made from left over green tomatoes. These are the tomatoes that don't ripen at the end of the season. (Absolutely the best relish ever). Old fashioned carrot and orange salad (a box of oranges from a friend so have to use those up). 99c a bag carrots from supermarket. So altogether this meal for 3 people would have cost less than $5. Rave reviews. My daughters partner said he'd easily have paid $30 in a restaurant for this meal. In case you're wondering "where's the protein?" - I used chickpea flour for the batter for the sweetcorn fritters.

Remember for the next two weeks we'll be discovering easy low cost meals for the family, with the emphasis of cooking from scratch and incorporating local produce. This was dinner Day 1. Eggplant, butternut and chickpea curry with brown rice and quinoa. Greens and butternut from the veggie patch. Cooking tip: The Phillips One Pot has totally transformed how I prepare my meals. So versatile as it includes sauté, slow cook as well as pressure cook and reheat.
