2 tblsp rice wine vinegar
1 tsp sesame oil
Finishing touch, add a sprinkle of sesame seeds.
If you are hosting, add a touch of greenery. Shallots, parsley or whatever you have laying around

Just another day in the office
These bad boys have been out since feburary, catching juvenile oysters. Around August they'll be ready for stripping.
Fun Fact: Sydney rock oysters over their lifetime, change sexes. The first spawning is predominantly as a male and subsequently as a female. Sydney rock oysters are serial spawners and will release multiple times during the spawning season. Adult males release hundreds of millions of s***m and adult females release up to 20 million eggs into the water. The usual spawning season occurs during late summer into autumn. Environmental conditions, such as an increase in water temperature (above 20 degrees celsius) along with suitable tides and currents, aid the distribution of spawn.
In the first few hours of spawning and fertilisation, they develop into microscopic larvae that drift at the top of the water column up to 2 weeks. During this time they develop transparent shells and a retractable foot. Oyster larvae utilise their foot to find a suitable site for permanent settlement on a clean, hard substrate (slats). The foot is reabsorbed and considered as juvenile or 'spat'. There are a number of different techniques used to collect spat, however here at the perfect oyster we utilise plastic slats. Our plastic slats are created out of PVC pipe cut into long strips, which are crisscrossed on top of one another over an aluminium frame (the stack no higher than half a meter). These are than carried out to the catching lease, ready for spawning season 😀💭🛶🐟
