Sunday Musings: A Cake Journey
Starting with cupcakes for local markets, my cake business gradually shifted to birthday cakes and eventually into the wedding industry over the last 12 years. Compared to a lot of local cake makers, that's quite a stretch. Despite setbacks and tough weeks, I've stayed the course, even though I've scaled back this year, still tackling a wedding cake almost every week.
I've noticed a big shift in wedding trends over the last 5 to 6 years. Initially, fondant cakes were the norm, which I was comfortable with. Then came the rise of 'rustic' styles with naked cakes adorned with fresh flowers and fruit, with buttercream icing. I was skilled in smoothing ganache and buttercream under fondant, but I marveled at others' creativity and buttercream's versatility. Now, fondant-covered cakes are rare and although I was initially resistant to change, I eventually embraced buttercream, realizing it was either adapt or quit.
Now I assume clients will want buttercream, and I'm ok with that. Working with buttercream presents challenges in our hot summers and warm winters, but I've come to enjoy it, and in all honesty, most people prefer to eat buttercream.
So, as you frock up for the next wedding you're attending, spare a thought for fondantβalmost a relic now, but still an option, if you want to stick with a more traditional cake.

Beautiful white and gold themed 21st birthday cake with 5 dozen cupcakes delivered over the weekend. The flavours were black forest, caramel and vanilla bean. π
If this one looks familiar, that's because it should! This is the bottom 3 tiers to match the top 2 tiers (delivered earlier this week) of a 5 tier cake. The happy couple had a small ceremony with closest friends and family, then a party with all their special people on the weekend. β€οΈ
This was my last Easter cake! Delivered yesterday to Cedar Creek Lodges. If you've never been, they have a lovely outdoor, fully covered ceremony and reception area. Perfect for the warmer months. It's a lovely venue.
This is the top 2 tiers of a 5 tier cake. The happy couple had a ceremony at the registry office with close family and friends, and the bottom 3 tiers will be served on the weekend for a larger celebration with everyone else. π
I delivered this one to The Springwood Hotel over Easter. Unfortunately a minor bingle in the carpark caused the top two tiers to topple. I was able to repair most of the damage on site, and offered my client a credit for their next order to compensate for the not quite perfect cake.
