Vietnamese open faced omelette!! This humble omelette is filled with various meats, fresh herbs, sprouts, green onions and seasoned with fish sauce. It's not unusual to find this served as a side dish during lunch or dinner in a traditional Vietnamese home.

I grew up eating this many nights with a savory meat dish, vegetable soup and of course some fluffy white rice. I genuinely loved it when my mom cooked eggs for dinner .☺️ On lazy nights I'll eat just this with rice in utter satisfaction.

This omelette is best not fully cooked but a little soft and wet on top. Having it opened faced is also aesthetically pleasing.
