Today I was off to merricks to process for Wendy.
First up I had processed a young Angus for myself dressing to a healthy 235kg.
Then I tackled the big boy who is the brother of a steer I processed for Wendy the previous year. He went 355kg on the hook 🪝 😳
The fat coverage and the big muscling this guy is sure to impress with some outstanding cuts.
I'm confident he will have amazing marbling and tastes incredible🥩🍖🍔
Well guys that's it for me for awhile I have 3 dayshifts at the steel factory.

Today I returned to Tooradin for Helen and her families big moster steer.
I was lucky enough to be joined by my beautiful partner kara to help me tackle the big boy.

The sun was actually out while we worked away with the tunes pumping.
The big steer had quite alot of fat to trim off although the trade off was some beautiful marbelling threwout the whole carcass.

Some people pay upwards of $40,$50,$60 per kg for some of theses steaks meanwhile my customers only pay $3 per kg!!!!

The quality and savings processing your own livestock is incredible 😲

Please get those bookings sorted asap as I am filling my diary very very quickly.

I was a busy boy today returning to cut up Graham's 3 lambs down in merricks.
2 of the 3 were bang on with little to no trimming required the last was a little small for my liking but will still be super tender.

After a quick clean up I was off to Tooradin to process Helens big steer.
I should have kept quiet about doing small beef haha this guy holds the record so far this year 438kg dressed!!
There was plenty of fat coverage there but looked like some great marbling👌

Well that's it for me for afew days I have 3 nightshifts at the steel factory.

Wel well the rains are here!!
This morning I was off to merricks for a small job for Graham. 3 lambs all set up in a handling pen ready to go.
Of course Graham agreed to pay the minimum of 6.
I was quite happy I was home for lunch and now I can enjoy a few days off for some well earned rest.

Today I returned to Cranbourne to.finish processing for Nikki and Aaron.
I was lucky enough to be joined by our regular butcher Luke as we smashed threw the workload.

Luke carried most of the load today breaking down the carcasses and doing all the bandsaw work.

I truly am lucky to have the best customers around. We were supplied with endless coffee and at the end of the day afew ice cold beers and also some farm free range eggs!
Genuine good people who deserve the best and I would work for any time.

I am happy to report I will be returning to process 2 steers for them in afew months time.

Good morning everyone.
Just a quick post to notify everyone our prices are remaining the same as last year with 1 new addition.

Quick recap
Beef $3 per kg dressed
Lambs and goats $85 each minimum of 6
Bigger sheep will be a negotiated fair price between myself and the customer.
Fuel $100

The only new addition is I am now charging a minimum of $700 for beef due to the number of small and light cattle I have been processing recently.

I believe this is a fair and reasonable request as I have a minimum for lambs and this is still a very competitive price to get your animals humanly processed into some amazing tasting meat 🍖 🥩

Also I just wanted to say thankyou so much and I can't tell you all how proud I am at how well business is going and I really appreciate all the recommendations to friends,family and neighbours the future looks strong and bright here for norris mobile butchering 💪💪😁😁

Today I was off to Cranbourne for Aaron and Nikki's 14 lambs and 1 steer.
There was 12 year old lambs all penned up nice and of course we had 2 old sheep that just didn't want to play the game and decided to run threw to the neighbours!
But as you know this butcher always gets his numbers and with little fuss they were taken care of.

After the lambs were in the coolroom and a short break big shoutout to Aaron for making me some ham steak and cheese toasties to keep me running I processed their 2 year old angus x fresian steer.
The steer was quite small but I reckon those steak will be as tender as anything.👌

This morning I was off to sommerville with my eldest daughter caydence to finish processing for Byron and his family.

I had abit of a scare at the start leaving the gate open so I could get the wheel barrow threw and of course there was a young heifer who decided the grass on the other side looked tastiest luckily she was in a playful mood and went for a jump and run back into the paddock for me 🤦‍♂️🤦‍♂️

A nice and healthy lowline steer had a great coverage of fat and some excellent marbling threwout the carcass.

We also made roughly 20kg of aussie beef sausages I hope every tastes as good as it all looks!

Guys please get those bookings in quickly I am fully booked until February next year!!

I've been a busy boy as usual.. before leaving to head away I cut up Dale's steer in rosebud after a quick clean up and pack I was off to my cousins in Mansfield to finish off processing the steer he shot afew weeks back.

After getting a big load of firewood from kyle I was off to narbethong to see my sister for her birthday! I was also extremely lucky to go for a hunt and got my first big stag! I am over the moon to fill my fridge and freezer with fresh venison, something I'll never forget☺️

Today I was off to sommerville for Byron's young lowline. It was textbook of how I like to operate, the steer was happily eating calmly in his paddock and Byron had everything all set up for me.

Well it's back to the steel factory tomorrow 3 dayshifts and 2 nights

Hey guys!
Well I have been keeping busy as usual. I processed a young steer for a regular customer dale in boneo before nightshift on Wednesday.
I made a friend his names the governor the goat haha, cheeky bu**er let himself into the work ute and ate my apple.
Dale's steer dressed very well just under 300kg.

Today I returned to Pakenham to finish processing for Terry and his young family.
I was joined by my beautiful eldest daughter caydence and our regular butcher Luke.
It was a wet and windy day but we pushed on threw and Terry was an amazing host providing us with drinks and a friendly chat, his young children also came out to have a sticky beak to see how we finish processing their delicious home grown beef!

Of course when everything is going to smooth something gotta give, once Terry left to dig a hole for his neighbour we shorted out the electricity running all our equipment and had to wait for Terry to finish up to fix the issue.
Lucky it was just a fuse and we finished up just before lunch.

I am happy to report we have been rebooked to return for Terry early next year

Well after somebody slept in this morning I was off to Pakenham to process 2 young Angus steers and 1 lamb for Terry and his family.

It was a dark and foggy start that turned into a cracking day. The animals were cheeky and broke out of their small paddock but after a little time trying to get a good safe shot we were in business!

Terry was a fantastic host bringing me drinks and asking lots of questions and it put a smile on my face that he gave his young children the choice if they wanted to come see what processing their livestock was all about and actually learning where their meat comes from and what it actually takes to put it on the table.

To top off a excellent day I was sent on my way home with a couple of cold beers 🍻

Hey guys!
I have been busy as usual and have fallen behind keeping you all up to date.
My cousin in Mansfield has processed his very own belted Galloway, an active hunter he has taught me alot over the years so I will be making the trip up to cut it all up professionally and getting out for a hunt and afew beers.

Yesterday I returned to Devon meadows to finish processing the large bullock for robert and his family. Due to nearly a 3 week hang there was alot of trimming required from fridge burn but once the outer layer was removed it actually came up great 👍 naturally the bull was large and quite lean but the flesh was very soft to touch.
I am happy to report I have been rebooked in for a further 2 bullocks to be processed☺️

Today I was off to Tooradin to finish off processing 2 small steers for Ben.
I was joined by everyone's favourite apprentice albie as we cruised threw the work with lots of laughs 😃
Albie is in his 2nd year as an apprentice and I am very happy to report he excels at his job and is miles ahead of any 2nd or 3rd year come to think of it.. I am happy to say I can leave him to break down the carcass's all by himself

I returned to rosebud this morning to finish processing 7 lambs for bronson and his family.
I was up bright and early and I was lucky enough to have bronson make me a coffee and help package all the delicious lamb.
I didn't take any pictures today it was all over before It started haha again bronson to the rescue he sent me afew he took.

I brought myself a back up crane scale for emergencies and even lashed out for afew new blades to keep us running smoothly.

Big day tomorrow also the customer booked me in to do 2 steers but rang and asked if I could do another as well. So 3 steers for our regular customer Ben out at Tooradin.

Well I have been flatout like a lizard drinking lately which has put me behind in keeping all my loyal followers up to date with my adventures 🙃

Last week I put a fully in tack bull into a coolroom for Robert and his family just out at Devon meadows.

The following day I was joined by everyone's favourite apprentice albie and we managed to pull tyler out of retirement and back on the knives for us as we set off to narre warren to finish processing Derek's 2 Angus steers.
It was a great day catching up with the boys and abit of banter while we smashed threw the big workload of amazing fresh beef.

Then to top it off I was off to Rosebud the following day to put 7 lambs into the coolroom for our regular customers bronson and Charlotte! Everything was going smoothly and I woke myself by stupidity leaning against the electric fence that keeps their horses in order haha 😄

Busy busy lately thanks for all your recommendations and support guys I couldn't do it without you all ❤️

Today I was off to narre warren for Derek's 2 heifers. A repeat customer, I was asked to process these Angus x Hereford.
It was super foggy this morning making it abit more difficult to get a clear shot. Once the fog had started to lift i was into the work.

The beef was really nice due to lots of grass and not over stocking their land.One dressed 297kg and the other 263kg.

Again, I have been asked to return next year to process again for Derek!!

This morning I was off to Mt Eliza to finish processing for jed and Estelle. A very nice big steer cut up fantastic! The meat was extremely soft and had good amounts of fat and marbling.I was lucky enough to be joined by our regular butcher Luke and my beautiful partner kara for afew hours.

We were on fire today smashing threw the big body of beef in I'd say 4 hours, giving our customers some variety of cuts to see what they like such as some roasts,diced stewing steak and afew more secondary cuts to test out their cooking.. we were all spoilt with coffee's also thanks guys!
To top off an excellent morning we are super lucky as we have been booked in for return work in afew months😀👍

Another absolutely cracking day as I was off to Mt Eliza for jed and Estella's big Angus cross steer. It was a perfect set up with the steer already in a pen calm and feeding on hay there was absolutely no stress what so ever which is critical in processing livestock.

The big boy went abit over 355kg on the hook 🪝

As jed was away on business their neighbour Andrew was there to lend a hand with a good chat and disposing of the waste. Thanks mate!

Of course what's a days work without something playing up?? Haha my crane scale decided it didn't want to play the game today. I changed the batteries but no win so I took it apart and found 2 of the screws were loose that connected to the hook once I got them sorted bingo we were back in action.

Well that's it for me guys back to the steel factory for 3 days then believe it or not I'm taking a break for 5 days for some well earned rest. Please remember to organise your bookings asap as I'm getting extremely busy it's bloody fantastic

I was back on the road again this morning out to beautiful red hill to finish processing 8 lambs for David and Mike.

After a chilly start the sun came out and it was absolutely cracking day for it.
Unfortunately my eldest daughter may have fractured her ankle so she couldn't come help today so mike was kind enough to pack while I sliced and diced my way threw some beautiful lamb. Perfect creamy white fat with some marbling and I also done some b***d out roasts legs and some forequarters perfect for the Webber or BBQ.

I'm happy to report I have been rebooked In to return next year 👍

I was back in action today at narre warren for Andrews 2 crazy wild steers.
I was joined by my youngest daughter mel as we wrestled threw the days work.
There's no one else I'd rather be in the trenches with then my little girl, her bright, bubbly personality and cheeky humour made the day a breeze.

The meat cur up very well, Andrew decided to keep all the main cuts while opting to mince most of the secondary cuts and roasts for sausages. We made 3 types, aussie BBQ, Texan Chilli and also herb and garlic. They smelt absolutely delicious while making them.

To top off the day turns out I'm human after all I managed to cut a slither off my hand while trying to get my snitzels paper thin. Lucky it was just a kiss and nurse mel patched me up with some bandaids, tape and afew gloves to keep everything sanitary.

I was off to beautiful Berwick today for 2 young heifers for Andrew.
Without a doubt these were the flightiest cattle I have ever worked with making it really difficult to get a good clean shot.
Unfortunately for them I am quite stubborn and I get my shot haha.

Please guys have your livestock organised and separated for me before I arrive!!!
It's hard enough to get a nice safe shot with having to second guess if it's the right one or if another animal is behind it.

Also do the right thing and notify your neighbours you are having animals processed.

CLOSE THE BLOODY GATES!!!

Believe it or not I actually have a day off to rest tomorrow before I'm back at the steel factory 2 dayshifts 3 nightshifts.

I was back in action today in red hill again to process 8 black suffolks for Dave and Mike. Kara joined me as we had to pick up her car from being serviced so she was kind enough to keep me company and take lots of photographs for our loyal followers.

It was a fresh start to the morning and funny enough on the way to the job I passed another mobile butcher heading to Red hill also!!
I gave Roy a ring and he was off to process 17 lambs on his own unfortunately as his off sider has some family responsibilities.
Roy's full time job includes training apprentices and potential workers for jbs.

It was a beautiful day with my regular Customers having everything set up ready to go for me to come in and smash threw the work and they keep producing such fine livestock time and time again, it truly is impressive 🙂

Today I returned to beautiful red hill, joined by my partner kara and our regular butcher Luke.
We had to finish processing 2 old hoggets and some 11 lambs and big two tooth.

I was lucky to have so much help as the carcass were quite big and as you can see from some of the photos required alot of trimming but besides that the meat itself was quite soft and alot had abit of marbling threwout.

Merv and his lovely family spoilt us all with some brekky, machine made coffee and pikeletts😳😳🥰😍

This morning I was off to Red hill to process some big two tooth and a couple of hoggets for Merv. Staying with the breed black faced suffolks seem to be quite popular as of late.

It was a cracking day with a fresh start to the sun shining all day and these views I couldn't complain one bit.

We had 13 all up with afew lambs but most were quite large and the 2 hoggets were monsters haha. One was 89kg full on the hook dressing to 57kg!!

It was fantastic to see mervs young grandson out on the tractor giving us a hand. At 13 young hunters aspirations are to become a farmer it really amazing to see that the values of old are still alive with the kids rolling up their sleeves and jumping into work, knowing full well what's involved and where their meat comes from
Well done young fella 👏

Unfortunately guys I'm back to the steel factory tomorrow so stay tuned for our next adventure when we return to finish processing for merv.

Well I was up bright and early this morning returning to Leongatha to finish processing 4 lambs for Melissa and her family.
It was a fresh morning with lots of fog but the sun was shining and it turned into a beautiful day, check out those views wow!!
I dream of the day I could wake up to something like that.

As always Melissa's black faced suffolks were on the money. We let them run afew months longer and it has paid off with larger lambs and perfect fact coverage. I'm also happy to report I've been requested to return again next year🙂

Today I was out Leongatha way to process 4 black faced suffolk lambs for Melissa our regular customer. They unfortunately fell short of the minimum of 6 but still paid the total plus travel.

Melissa was in the process of buying more when she had to drop and run to help her family. My customers are so great!

We also had another customer pull out who was on the way but I was kind of greatful because in true Gippsland fashion the rain fell heavy and fast once I arrived haha.

Today I was off to process 3 big sheep for sammy and 13 for Ian on the peninsula. It was a wet and windy day but I pushed threw to get the job done and enjoy some of the sunshine.

As you can see in the photos Sammy's sheep were huge compared to Ian's lambs, this is the perfect example of why i charge more for older sheep its alot more work.

There was something about today that the sheep and lambs where escaping before I could process them. Lucky I brought the trusty rifle to make quick work of the cheeky Houdinis!

I was also spoilt today with puppies!! Sammy had afew Bordeaux cross bulldog they were only 4 weeks old!! Not to be out done Ian had an 11 week old border collie check out those beautiful eyes 😍 it's a wonder I got any work done at all haha.

Today I was off to wandin to finish processing 1 big steer and 10 lambs.
It was an early start to get the job done, I was joined by my beautiful partner kara and Luke.

The beef was quite fatty which tells me this guy was spoilt and was in a very good few paddocks, although once the fat was removed the beef was super soft and has some marbling threwout all the cuts.
At the customers request we left alot of the primals whole so it can be hung in their dry ager.
Once we finished up making some mince we also ran threw about 30kg of aussie beef sausages.
