POV: Spring has arrived, the weekend is just around the corner, and you’ve just made ’s Green Spaghetti Carbonara—it’s SO delicious! 💚🍝
Ingredients
- 250 g spaghetti - Rice Quinoa Spaghetti
- 2 tbsp extra virgin olive oil
- 2 clove/s garlic - crushed (or garlic powder)
- 1 bunch/s asparagus trimmed and cut in half
- 1 cup/s frozen peas
- 60 g baby spinach a big handful
- 2 free-range or organic egg/s – at room temperature
- 120 g parmesan cheese – finely grated, (1 cup)
- 1 tsp smoked paprika
- 1 lemon/s – zest of whole and juice of half
- Sea salt and freshly ground black pepper – to taste
Method
1. Cook the pasta until al dente, reserving about two tablespoons of the cooking water.
2. While the water is boiling, add the olive oil, garlic, and asparagus to a large pan (you are going to add the spaghetti to it). Cook stirring for 3-4 minutes or until the asparagus just starts to soften.
3. Add the peas and spinach, stir until the spinach just starts to wilt.
4. In a jug whisk the eggs. Add the finely grated parmesan, smoked paprika, lemon zest and juice of half the lemon. Season well.
5. When the pasta is al dente, working quickly drain and add to the pan with the vegetables with the reserved water. Quickly pour over the egg mix and toss well. You are wanting the heat from the just cooked pasta and vegetables to set the egg. You can turn the heat back on very low – just take care not to scramble the egg.
6. Serve immediately with more grated parmesan if you wish.

To celebrate they shared with us the yummiest Coco Pop Crackle recipe from the book that has us all ready to don party hats and play pass the parcel. 🎉🥳🎊
Here it is!
Coco Pop Crackle
A healthy and delicious spin on a childhood classic. These crackles take just minutes to whip up, are super easy and fun to make with your little ones, and are loved by the whole family.
Ingredients:
+ 1/2 cup coconut oil
+ 2 TBS honey (maple syrup works too)
+ 2 TBS raw cacao
+ 2 cups puffed rice (brown rice if you have it)
+ 4 TBS h**p seeds
Method:
In a pot melt the coconut oil, then add honey and raw cacao and stir until melted.
In a bowl add your rice puffs and h**p seeds, mix together then add your wet mixture in and combine well.
In your moulds of choice (we use muffin moulds but a loaf tin would work well too), divide the mixture up and press down well (these made 12 small ‘muffins’) Set in freezer for at least 30 mins and enjoy!
Age: 18months +
