Meet Anthony Cutri, the new Venue Manager at D.O.C Osteria, Carlton! Born in Fremantle, the Italian heart of Perth, Anthony grew up immersed in Italian culture. Spending his childhood with his Nonni, he developed a deep love for Italian traditions from a young age, inspiring him to study both the language and culture. This journey led him to pursue a career with the D.O.C Group, where he’s been a vital part for almost 4 years.

Anthony’s vision? To keep serving those authentic Italian vibes while adding his own touch of innovation. He’s here to create not just great food but memorable experiences for the D.O.C community and team.

Meet Filippo, our bar manager at D.O.C, St Kilda! Starting his journey 9 years ago in Imperia, Italy, he’s worked his way from waiting tables to becoming a skilled bartender with top-notch training in mixology.

Originating from Imperia, a charming seaside town in Liguria. After nearly a decade of experience, Filippo moved to Australia to take his career to the next level. His go-to dishes? Pizza San Daniele to share with friends or Campanelle with Duck & Montenegro ragu for a special date.

Meet Francesco, our talented pizzaiolo at D.O.C Pizza & Mozzarella Bar, Southbank. 🇮🇹

Originally from Palmi in Reggio Calabria, he found his passion for pizza after moving to Australia. Francesco’s hometown is known for its stunning sea and mountains, as well as its artisan dishes like Struncatura pasta and n’duja. His go-to pizza? A classic Margherita for its authentic taste, followed by the San Daniele and Soppressa. When he's not crafting pizzas, you’ll find him relaxing and appreciating the simple things. Say ciao next time you visit!
