3 Tips to become an espresso cowboy & start making better espresso 🤠☕️
1️⃣ Tip 1 Use a scale ⚖️
Brewing with mysterious amounts of coffee will result in mysterious flavours.
By using a scale you can repeat recipes that worked and improve brews future brews.
You might be very luck and brew a fantastic espresso without weighing but when it comes down to repeating this you will struggle by guessing how much coffee you are using you won't be able to recreate this.
2️⃣ Tip 2 Use fresh beans 👌
Lighter roasted coffees tend to stay fresh longer so when brewing espresso make sure you store your coffee away from light, moisture & temp.
But most importantly try to use your coffee within around 2-4 week period.
Making espresso with old coffee will result in stale, weak and watery taste. No one want's their espresso tasting like this 😩
3️⃣ Tip 3 One variable at a time ☝️
When dialling-in your espresso try to only change 1 variable at a time, whether that be grind size, ratio, pressure or temperature.
By changing just 1 at a time you won't get caught up endlessly dialling-in one coffee.

No one likes an uneven brew, dry grounds that haven't been extracted until your second pour can change the taste of your coffee. This occurs when different grounds are extracted at different rates.
This is why using a gooseneck kettle to control the flow of your water helps to evenly saturate the grounds and extract everything at the same time👌☕️

This is known as the 'Kubomi technique' and is acheived by placing a chopstick in your filter paper before adding your coffee grounds, then twirling it around to create this spiral pattern.

When pouring latte art, try to pour milk high when first 🥛☕️
This helps create agitation and break up any crema, it also helps to sink any dark spots.
The micro foam is what gives the milk its smooth, silky texture and depending on how high you pour will define whether you are creating the white contrast or not.
How to cup coffee🥣☕️
Cupping coffee is the easiest way to remove all brewing variables and just focus on the coffee itself. Coffee cuppings are usually done by coffee roasters, green coffee buyers and sometimes even cafes but it doesn't have to just be for the professionals.
This is an easy recipe you can follow to cup coffee at home👇
You will need:
10g of each coffee you want to cup
150g water
Bowls + Spoon ( you don't need anything fancy, if you can try to use similar sized cups and soup spoons work great too 😆
Method:
1- Grind your coffee coarse & add to your cupping bowl. I use a grind size of around 30ish clicks on the Comandante.
2- Pour your 99ºc water over the grounds and let this brew for 4mins.
3- At the 4 min mark stir each of your coffee samples 3 times and smell the aromas, this is called 'breaking the crust'. (Make sure you have an extra cupping bowl with water so you can clean your spoon, you don't want to contaminate the other coffee samples.)
4- Remove any of the floating coffee grounds by skimming the surface, this is easier to do with 2 spoons.
5- Taste and compare your coffee!
