Try our savoury pancakes using sweet potato flour and 'smoked salmon' made using carrot!
Ingredients:
Pancake Batter
๐ฅ 1 cup Lotus ๐ฆ๐๐ฒ๐ฒ๐ ๐ฃ๐ผ๐๐ฎ๐๐ผ ๐๐น๐ผ๐๐ฟ
๐ฅ ยฝ cup Lotus ๐๐๐ฝ๐ถ๐ป ๐๐น๐ผ๐๐ฟ
๐ฅ 1 tbsp Lotus ๐๐ถ๐ป๐๐ฒ๐ฒ๐ฑ ๐ ๐ฒ๐ฎ๐น
๐ฅ 1 can coconut cream
๐ฅ or 1 cup milk of choice
๐ฅ 2 tsp Lotus ๐๐ฎ๐ธ๐ถ๐ป๐ด ๐ฃ๐ผ๐๐ฑ๐ฒ๐ฟ
Cured Carrot โSalmonโ
๐ฅ 2-3 carrots
๐ฅ 1 tbsp apple cider vinegar
๐ฅ 1 tsp Lotus ๐ฃ๐ถ๐ป๐ธ ๐๐ถ๐บ๐ฎ๐น๐ฎ๐๐ฎ๐ป ๐ฆ๐ฎ๐น๐
๐ฅ Optional: a splash of vegan fish sauce or smoke essence
Method:
1. Peel the carrots then using a peeler get long strips and toss into a bowl.
2. Add the vinegar, salt and fish sauce or smoke essence to taste. Leave to cure while you make the pancakes or refrigerate.
3. Combine all the batter ingredients together by whisking or blending.
4. In a non-stick or well-greased pan cook the pancakes in batches.
5. Stack your pancakes with unsweetened coconut yoghurt with added fresh chopped dill, the cured carrot and lemon wedges. Sprinkle with Savoury Yeast Flakes and serve warm.

๐งก ยผ cup coconut oil
๐งก 4 tbsp cold water

๐ 1 can (400g) coconut cream
๐ 1 tbsp Lotus ๐๐ผ๐ฟ๐ป๐ณ๐น๐ผ๐๐ฟ
๐ 1 tbsp Lotus ๐ง๐ฎ๐ฝ๐ถ๐ผ๐ฐ๐ฎ ๐๐น๐ผ๐๐ฟ
๐ 2 tbsp Lotus ๐ฆ๐ฎ๐๐ผ๐๐ฟ๐ ๐ฌ๐ฒ๐ฎ๐๐ ๐๐น๐ฎ๐ธ๐ฒ๐
๐ ยผ tsp tumeric
๐ ยฝ each onion powder, garlic powder, salt
๐ 2 tbsp soy milk
๐ 1 tbsp olive oil
๐ 1 brown onion (diced)
๐ 2 cloves garlic (crushed)
๐ 1 red capsicum (sliced)
๐ 2 cups button mushrooms (sliced)
METHOD:
-๐ค๐ณ๐ถ๐ด๐ต-
1. Combine the dry ingredients in a food processor. Add the oil, combine, then add the water and combine to a dough.
2. Press the dough into a quiche dish and refrigerate while you make the filling.
3. Preheat oven to 180ยฐC
-๐ง๐ช๐ญ๐ญ๐ช๐ฏ๐จ-
1. Place the dry ingredients into a food processor and combine well. Add the coconut and soy milk, process until well smooth.
2. Heat the olive oil in a large pan, over a medium heat. Add the onion and garlic, sautรฉ until soft and translucent.
3. Add the mushrooms and capsicum, sautรฉ until the mushrooms have softened.
4. Turn off the heat and add the coconut milk mix to the pan. Fold through the mushrooms and capsicum.
5. Add the mix to the crust base. Cook in the oven uncovered for 30-40 minutes until firm and golden.
Allow to cool for at least 10 minutes before serving.

Ingredients:
4 eggs, separated
1 tsp apple cider vinegar
ยฝ cup Lotus ๐ซ๐๐น๐ถ๐๐ผ๐น, separated
100g butter, or coconut oil
1 teaspoon vanilla extract
ยผ teaspoon mixed spice
2 cups Lotus ๐ฅ๐ฎ๐ ๐ช๐ต๐ผ๐น๐ฒ-๐ก๐๐ ๐๐น๐บ๐ผ๐ป๐ฑ ๐๐น๐ผ๐๐ฟ
ยฝ teaspoon baking soda
Method:
1. Separate the eggs into whites and yolks.
2. Beat the egg whites with the apple cider vinegar to soft peaks. Slowly add ยผ cup of xylitol and beat to stiff peaks.
3. Separately beat the yolks with the butter, vanilla, spice and ยผ cup of xylitol until pale and fluffy. Fold in the almond flour and baking soda, it will be a stiff mixture.
4. Fold in 1/3 of the whipped egg whites at a time, gently.
5. Spoon into lined or silicone muffin tins and bake at 180ยฐC for 15 minutes or until springing back and golden on top.

METHOD
๐ Mash the banana in a large bowl. Pour in the wet ingredients and mix well.
๐ Add all dry ingredients to the same bowl and mix to a smooth batter.
๐ Cook ยผ cup batter on a non-stick pan over a medium heat.
๐ Serve with fresh seasonal fruit and coconut yogurt.

Method:
1. Preheat oven to 180ยฐC
2. Mash bananas in a large bowl. Pour almond milk and whisk until well combined. Add the brown rice syrup and whisk further.
3. Add the dry ingredients and mix until it becomes a smooth batter.
4. Fold through chocolate chips.
5. Spoon into silicon muffin moulds and bake for 20-30 minutes or until cooked through.

2-3 tbsp almond butter

Method:
1. Preheat oven to 180ยฐC.
2. Add whole-nut almond flour, oats, cinnamon and baking powder to a food processor, blend until smooth.
3. Add in 1 banana, chia eggs, almond milk, almond butter, sweetener and vanilla extract then bend.
4. Stir through chocolate pieces, transfer to a lined baking tin.
5. Slice the other banana and place on top to decorate. Sprinkle more chocolate chips and drizzle almond butter.
6. Bake for 25-30 mins until golden and cooked through.

1. Simply mix the ingredients together, adding salt to taste. It is supposed to be salty, as you use it as a seasoning sprinkle. But itโs up to your tastes.
2. Keep in a jar or bag in the pantry or at the table. Sprinkle liberally on pasta dishes, salads, soups and stews or as a topping on pizzas, roast or roasting vegetables or pasta bakes.

Fresh or dry herbs*
2-3 tbsp olive oil
1. Follow the directions for our Plant Based Parmesan. Slowly add the olive oil and mix until it just comes together.
2. Press into a container or dish and refrigerate to set. Turn out by banging it gently upside down, or cut in the dish. Cut into cubes.
3. Stack your feta in a glass jar with herbs and cover with oil. Keep in the fridge but bring to room temp before using.
*A good combination of herbs are: mixed peppercorns, fresh thyme and garlic slices. Dry dill, celery seeds and fennel seeds. Dried chillies, garlic slices and rosemary.

๐ฅ 1 tsp apple cider vinegar โฃ
๐ฅ 1 tsp vanilla essenceโฃ
๐ฅ 1 tsp maple syrup โฃ
๐ฅ 3/4 cup ๐๐ซ๐ ๐๐ง๐ข๐ ๐๐ฎ๐๐ค๐ฐ๐ก๐๐๐ญ ๐

๐ฅ 1/4 cup ๐๐ซ๐ ๐๐ง๐ข๐ ๐๐๐๐๐จ ๐๐จ๐ฐ๐๐๐ซโฃ
๐ฅ 2 tsp baking powderโฃ
๐ฅ 1 tbsp ๐๐ซ๐ ๐๐ง๐ข๐ ๐
๐ฅ๐๐ฑ ๐๐๐๐ฅ

1. In a bowl whisk together the wet ingredients โฃ
2. In a separate bowl combine the dry ingredients โฃ
3. Pour the dry ingredients into the wet and mix to a smooth batter โฃ
4. Heat a non-stick fry pan and pour 1/4 of the batter to cook, sprinkling the choc chips onto the pancake batter as it cooks โฃ

Serve with vanilla yogurt, nut butter and fresh berries!โฃ

Try this Sticky Lemon Tofu recipe by ๐
Ingredients:โฃ
๐ 500g firm tofuโฃ
๐ 1 tbsp olive oilโฃ
๐ Few pinches salt/pepper โฃ
๐ 2 Tbs Organic Tamari Sauceโฃ
๐ 1/3 cup Organic Agave Syrupโฃ
๐ Juice and zest of 1 lemon โฃ
๐ 1/2 cup vegetable brothโฃ
๐ 1 tbsp Organic Tapioca Flour
๐ 1 tbsp waterโฃ
๐ Spring onions โฃ
โฃ
Method:โฃ
1๏ธโฃ Preheat oven to 220ยฐC. Cut the tofu into cubes and toss in the olive oil and salt/pepper. Spread onto a lined baking tray and bake for 30-40 minutes or until brown and crispy (turning half way through)โฃ.
2๏ธโฃ Whilst the tofu is baking, make the lemon sauce. Heat a wok or fry pan over a medium high heat. Add the tamari sauce, agave syrup, lemon juice, vegetable broth and whisk to combine. Bring to a simmer then reduce the heat to low. โฃ
3๏ธโฃ Whisk tapioca and water in a small bowl. Add to the pan and whisk mixture until the sauce thickens. Mix through the lemon zest and mix. Keep the sauce warm on a low heat until the tofu is finished cooking. โฃ
4๏ธโฃ Once the tofu is golden and crispy, add it to the pan and toss until it is completely coating with sauce. โฃ
โฃ
Serve immediately with rice and garnish with sliced spring onion.

cup vegetable oil

๐ง 1 tsp vanilla extract
Serve with:
๐ Fresh strawberries
๐ Toffee sauce
๐ Chocolate sauce
๐ Icing sugar
Directions:
1. In a medium bowl, whisk together the dry ingredients.
2. In another bowl, whisk the wet ingredients until combined.
3. Pour the the wet mixture into the dry and whisk until a batter forms. Set aside to rest for 10-15 minutes.
4. Turn on the waffle iron and heat the oven to 90ยฐC.
5. Pour the batter into the greased waffle iron and cook until golden and crispy. Transfer the cooked waffle straight into the oven to keep warm and crispy.
6. Repeat with the remaining mixture and serve with strawberries and your favourite sweet sauces ๐

INGREDIENTS:
๐ ยฝ cup Lotus Pantry ๐๐ก๐ข๐ ๐๐๐๐๐ฌ
๐ 4 tbsp Lotus Pantry ๐๐จ๐๐จ๐ ๐๐จ๐ฐ๐๐๐ซ
๐ 2 cups almond milk
๐ 1 tsp vanilla extract
๐ 2 tbsp maple syrup
๐ ยฝ cup raspberries (fresh or frozen)
๐ 1 tbsp lemon juice
METHOD:
1. Combine the chia seeds, cocoa powder, almond milk and maple syrup in a bowl. Whisk well.
2. Rest the mixture for 15 minutes then whisk again.
3. Divide the mixture into 3-6 jars (leaving 1cm room on top for the sauce) and place in the fridge to set for at least 2 hours.
4. Meanwhile, place the raspberries and lemon juice in a small pot over a medium-low heat. Stir and break up the raspberries for around 2-5 minutes until a sauce forms.
5. Pour the sauce over the set chia puddings and enjoy!

METHOD:
-๐ฆ๐ค๐ญ๐ข๐ช๐ณ๐ด-
1. Preheat the oven to 220ยบC
2. In a large bowl, combine the cornflour, soy milk, sugar and baking powder. Set aside.
3. In a saucepan over a medium-high heat, bring the water to a boil. Add the butter and stir until melted. Remove from the heat, add the flour and combine until a dough is formed.
4. Add the dough to the cornflour mix and combine.
5. On a lined baking tray, shape the dough to รฉclairs. Bake in the preheated oven for 25-30 minutes or until slightly golden.

1. Combine the cornflour, sugar and 1/3 of the milk in a bowl.
2. In a large saucepan over a medium heat, bring the remaining milk to a boil. Slowly pour in the cornflour mix and stir until it thickens.
3. Add the choc bits and stir. The mixture will thicken fast to remove from heat and stir until melted. Add the vegan butter.
4. Insert into a piping bag and poke three holes in the รฉclairs. Pipe the mix in to fill.
5. Once filled. Melt extra chocolate and dip the tops then sprinkle with crushed hazelnuts.

METHOD:
1๏ธโฃ Add 1 cup of the choc bits and the rest of the ingredients except the vanilla essence into a medium saucepan. Stir over a low heat until the choc bits have melted.
2๏ธโฃ Once melted, remove from the heat and stir through the vanilla essence.
3๏ธโฃ Pour the mixture into a lined baking dish and sprinkle the rest of the choc bits over the top. Set in the fridge for at least 2 hours.
4๏ธโฃ Once set, sprinkle some more Celtic salt over the top and cut into squares. Store covered in the fridge for up to 1 week.

Cured Carrot โSalmonโ
๐ฅ 2-3 carrots
๐ฅ 1 tbsp apple cider vinegar
๐ฅ 1 tsp Lotus Pantry ๐๐๐ฅ๐ญ๐ข๐ ๐๐๐ฅ๐ญ
๐ฅ Optional: a splash of vegan fish sauce or smoke essence
METHOD:
1. First cure your carrots. Peel them then using a peeler get long strips and toss into a bowl.
2. Add the vinegar, salt and fish sauce or smoke essence, if using, to taste. Leave to cure while you make the pancakes or refrigerate.
3. Combine all the batter ingredients together by whisking or blending.
4. In a non-stick or well-greased pan cook the pancakes in batches.
5. Stack your pancakes with unsweetened coconut yoghurt with added fresh chopped dill, the cured carrot and lemon wedges. Sprinkle with Savoury Yeast Flakes and serve warm.

METHOD:
1. Preheat the oven to 180ยฐC, spray a 12-count doughnut pan with oil.
2. In a large mixing bowl, combine the almond flour and rapadura sugar.
3. In a separate bowl, mix the remaining doughnut ingredients until well combined. Pour into your dry ingredients and mix until combined.
4. Pour into the doughnut moulds to 2/3 filled. Bake for 12-15 minutes.
5. Cool in the doughnut tin for 5 minutes then transfer onto a wire rack to cool completely.
FROSTING:
1. In a microwave safe bowl, heat the coconut milk until warm.
2. Add the choc bits to the bowl and stir until the choc bits have melted through.
3. Dip your cooled doughnuts into the frosting and sprinkle with your favourite toppings!

1. Line a 20cmx20cm baking tin with baking paper.
2. In a glass bowl add the white chocolate and melt by placing over a pot of simmering water. Stir until completely melted. Take off heat and allow to sit for 3 minutes.
3. In a large bowl add all the ingredients and pour over the melted chocolate. Stir and combine well.
4. Pour into the tray and spread out evenly. Sprinkle over the top a little extra chia seeds and goji berries for decoration. Place into fridge for at least 3 hours.
5. Cut into squares. Will remain fresh for 2 weeks in fridge in an air tight container.

1 cup frozen blueberries
METHOD:

1. Add all of the ingredients into a food processer and mix until combined and has a wet, crumbly texture.
2. Transfer and evenly distribute the mixture into silicone cupcake moulds. Press firmly and set aside.

1. Place the blueberries into a food processor and quickly pulse to roughly chop. Transfer to a bowl and set aside.
2. Add all the rest of the ingredients to a food processor or blender and mix until smooth and creamy.
3. Transfer to a bowl and gently fold through the blueberry mix.
4. Pour the mixture over the crusts and spread evenly.
5. Place the cheesecakes into the freezer for aprox. 1-2 hours to set.
6. Allow to thaw for 10-15 minutes before serving. Store in the freezer.
