🍃 Summer Fig Burrata Salad 🍃
😍🇮🇹👩‍🍳🇮🇹👨‍🍳👍🍷
Indulge in this fresh and vibrant Summer Fig Burrata Salad, a delightful combination of sweet figs, creamy burrata, crunchy walnuts, and juicy pomegranate seeds. Perfect for a light and elegant summer meal!

Ingredients:

2 cups fresh arugula
4 fresh figs, halved
1 ball burrata cheese, torn into pieces
1/4 cup walnut halves, toasted
1/4 cup pomegranate seeds
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze
Salt and freshly ground black pepper, to taste

Instructions:

Prepare the Salad Base:

Arrange the arugula evenly on a large serving plate or bowl.

Add the Toppings:

Place the halved figs and pieces of burrata cheese over the arugula.
Sprinkle the toasted walnut halves and pomegranate seeds evenly over the salad.

Dress the Salad:

Drizzle the extra virgin olive oil and balsamic glaze over the salad.
Season with a pinch of salt and a few grinds of black pepper to taste.

Serve:

Serve immediately and enjoy this fresh, flavorful summer salad.

4 large eggs
4oz cream cheese
Vanilla extract (to taste)
Cinnamon (a few shakes)
1 tbsp sweetener substitute
3/4 cup almond flour
1 tsp baking powder

Weight Watchers Loaded Greek Chickpea Salad
Ingredients:
2 cups cooked chickpeas, drained and rinsed
1 cucumber, diced
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1/2 cup Kalamata olives, sliced
1/2 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
Salt and pepper to taste
Instructions:
In a large mixing bowl, combine the cooked chickpeas, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and fresh parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Pour the dressing over the salad ingredients.
Gently toss the salad until all the ingredients are well coated with the dressing.
Allow the salad to marinate in the refrigerator for at least 30 minutes to let the flavors meld together.
Before serving, give the salad a final toss and adjust the seasoning if necessary.
Serve chilled and enjoy this nutrient-packed Greek chickpea power salad as a satisfying and healthy meal.
