Being the only seafood store in the village, we like to push the boundaries and try new exciting things with our products. Introducing Salmon Kabana 😀 flavoured with charred capsaicin fresh dill and a hint of cayenne pepper. Paired perfectly with cheese and crackers and a glass of wine, what better way to enjoy a Friday night with friends. While we have the kabana our friends at Mt. Eliza Village Gourmet Meats sell the bassine cheese straight from the supplier. Worried about giving it ago just ask us for a tasting in store( the kabana not the wine😉)
Looking for some delicious fresh meal ideas look no further than Thai 🇹🇭 steamed fish 🐠 with green lemon 🍋 and garlic.
Ingredients
- Rockling or barramundi would go well with this recipe 
- 3 lemons
- 5 cloves of garlic
- 2 red chillies (optional)
- 2 tablespoons of fish sauce
- 1 tablespoon of sugar
- 1 tablespoon of freshly grated ginger
- A few strands of fresh coriander
- 2 green onions
- Kaffir lemon leaves (optional)
Instructions
1. **Preparation of Fish :**

- Make diagonal cuts on both sides of the fish to allow the flavors to pe*****te.
2. **Preparation of sauce :**
- Finely peel and mince the garlic.
- Squeeze the juice of the lime.
- Thin the red peppers.
- In a bowl, mix lime juice, minced garlic, red peppers, fish sauce, sugar and grated ginger.
3. **Steam cooking :**
- Place the fish in a steam basket or on a heat resistant plate.
- Pour the prepared sauce over the fish, making sure to cover the inside and outside well.
- Add kaffir lemon leaves around the fish if you use them.
4. **Steam :**
- Steam the fish for about 15 to 20 minutes, depending on the size of the fish. It must be opaque and detach easily at the fork.

- Finish the green onions
- Once the fish is cooked, garnish it with green onions and coriander.

- Serve the hot fish, accompanied by jasmine rice for an authentic Thai meal.

🥂🍤 Creamy Tuscan Garlic Scallops 🍤🥂
Ingredients:
1 kg large sea scallops
Salt and pepper to taste
2 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 cup baby spinach
1/2 cup sun-dried tomatoes, chopped
Fresh parsley, chopped (for garnish)
Cooked pasta, for serving
Instructions:
Prepare the Scallops: Pat the scallops dry with paper towels and season both sides with salt and pepper.
Sear the Scallops: Heat the olive oil in a large pan over medium-high heat. Add the scallops in a single layer and sear for 2-3 minutes on each side until golden brown and opaque in the center. Remove from the skillet and set aside.
Make the Sauce: In the same pan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream and chicken broth, bringing the mixture to a simmer.
Add the Parmesan and Spinach: Reduce the heat to low and stir in the grated Parmesan cheese until melted and the sauce is creamy. Add the baby spinach and sun-dried tomatoes, cooking until the spinach is wilted.
Combine: Return the seared scallops to the skillet, cooking for an additional 2-3 minutes until heated through and coated in the sauce.
Serve: Serve the creamy Tuscan garlic scallops over your favorite pasta, garnished with freshly chopped parsley.

The best day of the Week…. Curried scallop pies hitting the oven. If it one thing we do well it’s definitely these, filled to the brim with scallops every time, so that every mouthful it’s full satisfaction 😉 made fresh every Thursday in store.

Garlic lemon pepper calamari (nice and easy in a hot pan served with chips and salad) and some store made seafood sauce paired together with some tasty cooked prawns.
