🇲🇽🧀 | Queso Chihuahua is from… you guessed it, the same state that gave us those cute little dogs, Chihuahuas. 🐕
This cheese has an interesting history, being first produced by Mennonite immigrants who settled in Chihuahua in the 1920s. It's a pale yellow semi-soft cheese that is sometimes referred to as Queso Mennonite. Sold either young & quite mild, or for those you prefer a sharper tangier taste, go for the aged, vintage or some say developed option. Best used grated as a cheese topping for many dishes, cheese filling for chile relleno, or to make a queso fondue. You won’t find queso Chihuahua in Australia, in fact you’ll barely find the real stuff outside the state of Chihuahua! The best substitutes are Colby, a medium to mild cheddar, Tasmanian raclette, or a Monterrey Jack, which is available at Costco, most cheese & speciality deli's now can help you find the perfect substitute!
Tortillas have 2 sides…
You wouldn’t wear your t-shirt inside out🙃, or back to front. It’s the same for when using corn tortillas🌽💛.
So which side do you use? The inner side of a tortilla is the side that is facing up when the tortilla first gets cooked on the comal’♨️ (tortilla pan or belt). The heat causes this top layer to rise & because of gravity, it is thinner than the side which lays on the comal (the thick, outside). This thin side is the side you want to put the food on, as the thicker layer will be less likely to break or crack.
This is just one little fact you can use to cook more for your familia en tu casa!🧑🏽🍳

Let's taco-bout Chillies. 🇲🇽🌶
Chillies are essential to achieving the unique authentic tastes in Mexican cooking & are used in marinades, salsas, soups, moles & more.
Mexico has hundreds of varieties of chillies & these are used to create a myriad of flavour combinations across thousands of dishes. The variety can be overwhelming, so remember, if in doubt, put chipotle in 😎 Chipotle makes everything taste better!
Use chillies for flavour, not just heat. Try having dried ones in your cupboard & fresh growing in your garden. Remember that the seeds for several fresh chilli varieties are available in Australia🇦🇺. Be warned though, as soil conditions can affect the spiciness level on several varieties – as a rule of thumb, if you want it spicy, go easy on the fancy potting mix & nutrient-dense fertilisers.
For those with a green thumb, Seeds can be purchased in Australia at retailers such as Chile Mojo, Poblano Mexican & Casa Iberica Deli.

We have access to some wonderful global produce here in Aus, however the costeño chile is one rare variety that we would love to get our hands on.🤩
The costeño chile is only grown & sold in the Oaxacan region🇲🇽 📍, often used in local mole recipes, sauces for tamales, & salsas. It’s moderate in heat yet fruity & we give it a 6/10 on the chilli-richter scale.🌶️🔥
Dried chiles are favoured in Mexican cooking mostly for their flavour element more so than their heat. Authentic Mexican dishes are not fiery as they are often depicted. We will debunk that another day.🤔

If you're craving a bowl of hot tortilla soup topped with queso panela but don't know what could possibly fill it's shoes here in Aus... fear not!
Queso Panela is sometimes referred to as ‘queso de la canasta’🧺 (cheese of the basket) due to the way it is hung up in a basket to set, which in turn creates the shape and distinctive basket pattern on the outside of the cheese.
Panela is a fresh white cheese, soft (think a little firmer than queso fresco), & has a very mild taste. The best substitutes available here in Australia are paneer, halloumi, or a very firm ricotta. 🕵♀️ If you're really hankering for some & are willing to go hunting for it some good quality Latino delis will sell real panela- we recommend calling around to save time though as it's not super common!
Flashback Friday⚡ Circa December 2012 - It's not just our logo that embodies the spirit of Frida Kahlo - she is also a major inspiration for a lot of what we do in our business, including how we decorated our restaurant! For those who have been to Frida's Casa Azul in Coyoacán, Mexico City, our place will look familiar: bright & bursting with colour (artists hey? 🎨).
