It was a rare, yet memorable hot day on a Melbourne waterfront. Many layers of our buttery puff pastry were assembled with velvety smooth vanilla custard, and vibrant mixed berries, in the company of beautiful people celebrating the love of a wonderful couple. ❤️

We truly felt like we were a part of the celebrations, while reflecting on how special it is to be able to watch our clients enjoy the things we work so hard to create. It doesn’t happen often, as most of our cakes are delivered, but this is one we will remember forever!

How could you resist these deep-filled Christmas Mince Pies? Topped with an orange crumble and a good fruit mince-to-pastry ratio. The pastry is very much like shortbread having it thick is so delicious having used the best butter. 🤤

A brief lesson in history!

Dating as far back as the 17th century, the decadent Mille-feuille is a continuing debate of who invented it- was it the French, or the Italians? It is referred to as ‘the cake with a thousand layers’ due to the amount of times a pastry chef will fold the puff pastry dough, resulting in a crispy, buttery final texture.

This textural dessert consists of razor-thin pastry layers and a luscious cream filling. We have combined both classic & modern recipes, embellishing ours with fresh raspberries.
