Wednesday calls for one of our favourite muffin recipes.
βBlueberry Protein Muffins - The perfect midweek snack!

β1/3 cup white flour
1/3 cup wheat flour
2/3 cup of your favourite mha protein powder
1/2 tsp baking powder
1/4 tsp salt
1/2 cup plain whole milk yogurt
1 egg
1/2 cup applesauce
1/3 cup sugar
1 tsp vanilla
1 cup blueberries, (fresh or frozen)

βPreheat oven to 200 degrees c. Line a muffin tin with liners or use non-stick spray.
In a large bowl combine flours, protein powder, baking powder and salt.
In a medium sized bowl whisk together yogurt, egg, applesauce, sugar and vanilla.
Add wet ingredients to the flour mixture and mix until just combined.
Place blueberries in a small bowl and coat with reserved 1 tbsp flour.
Gently fold blueberries into batter.
Fill the prepared muffin tin, nearly filling each muffin to the top. This should make ~6 or so muffins, depending on the size of your muffin tin.
Bake muffins at 200 degrees c for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
Allow to cool fully and enjoy! Store in an airtight container for up to 1 week or freeze for up to 2 months.

Those morning feels, before Iβve had my protein smoothie π±
created these heavenly Chocolate Coconut Protein Bars π±π«π₯₯ βShe used the vegan organic cacao & coconut by mha that is organic, vegan & h**p based. She shared the recipe with us! RECIPE Makes 10 small protein bars . .βοΈ1/2 cup vegan cacao & coconut vegan protein powder β.βοΈ1 cup oat flour .βοΈ1 cup milk of choice . .βοΈ1/4 cup coconut flour . .βοΈ1/4 cup cacao powder. .βοΈ4 tsp sweetener .βοΈ2 tblsp desiccated coconut.. . .βοΈ2 tblsp cacao nibs (optional). .βοΈ150g dark chocolate . . In a large bowl, mix all ingredients (except dark chocolate) together to form a soft dough. If itβs too wet or too dry, adjust by adding either more coconut flour or milk until you reach the desired consistency. Separate into 10 equal amounts then start forming into bar shapes. Place on a tray or plate lined with baking paper. Place in the freezer to harden slightly while you melt the chocolate. Melt the chocolate using either the stove top method or microwave. Remove the tray from the freezer then carefully dunk each bar into the chocolate. Place back on the tray and sprinkle with some extra desiccated coconut if desired.Bars need to be stored in the fridge in a container. Enjoy!
