★ Tiramisu Chiffon ★

In celebration of International Coffee Day this Tuesday 1 October, we have partnered with our friends at ST ALi coffee roasters to create the dreamy Tiramisu Chiffon Cake.

Starting with a coffee-infused sponge cake, masked in a smooth coffee buttercream and then topped with a rich ST ALi coffee and chocolate drip. The finishing touch are hand-carved chocolate chards for an added crunch.

To dial up the coffee loving, you can purchase the Tiramisu Chiffon in a bundle online with a 250g bag of ST ALi coffee beans to enjoy at home!

Serving 12, the chiffons are available to pre-order now for collection or delivery, and served by the slice at our Rosebery and Chatswood stores from Tuesday 1 October.

It's official. From today, Friday 16th August until Sunday 18th August, you can indulge in the L’Amande Cake, made in collaboration with French beauty connoisseurs, .

This exquisite almond creation has been masterfully crafted by Black Star Pastry’s Head Pastry Chef, Arnaud Vodounou, to celebrate the rich flavour of almonds.

A layered cake creation containing almond mousse, savoy sponge with touches of orange and bergamot, pear and rosemary compote, almond frangipane with crushed almond and almond sable. On top, a single handcrafted almond garnish filled with almond butter and half a toasted almond.

Purchase a slice of this limited-edition, gluten-free cake, ‘L’Amande’, and you’ll receive a complimentary travel-sized Almond Shower Oil (35ml). Available across all Sydney and Melbourne Black Star Pastry stores in limited quantities.

To our cake-loving Melbournians, we have made the difficult decision to close our doors in Melbourne, with final slices being served this Sunday 18 August.

For five years, our team have poured their hearts, passion, and creativity into the making of each cake, pastry and coffee served across our stores.

Rising costs, a tough economic climate and an industry-wide staffing shortage have forced us to consolidate our team and we will shift our focus to our original home of Sydney. All Sydney stores: Newtown, Sydney CBD, Rosebery, and Chatswood, alongside pop-ups at Burwood and Broadway, will continue operating as normal.

We want to thank our loyal regulars, once-in-a-while visitors and all those who have supported us in the wonderful city of Melbourne. We had a beautiful journey and many great friendships here and hope to see you one day, soon.

Seeing is believing, Sydneysiders. Black Star Pastry's well-loved Rosebery store will be transformed into an Izakaya for one weekend from Friday 21 June to Sunday 23 June.

Alongside a curated selection sweet and savoury items, our showstopping 'Ari-Gateaux’ sushi cake will be returning for three nights.

Your Izakaya experience will include:

★A Pear Roll starting with a classic French gâteau sponge filled with chestnut cream, sitting on a butterscotch biscuit base, and topped with red wine and Choya poached pears and finger lime ‘caviar’

★ A Grapefruit Roll filled with lemongrass cream, grapefruit jelly, julienned rockmelon, pomegranate jelly, pickled Granny Smith apple, and topped with dragon fruit and finger lime ‘caviar’

★A Rockmelon Nigiri with torched rock melon atop a sponge roll filled with coconut cream, pomegranate jelly and seeds wrapped in a crepe ‘nori’ strip

★A pipette of ‘soy sauce’ with a dark pomegranate molasses and yuzu sauce, ‘wasabi’ is in fact matcha white chocolate, and ‘pickled ginger’ is replaced with pickled slices of apple.

Along with the mouth-watering sushi cake, customers can enjoy neo-Japanese drinks powered by with a selection of reinvented Japanese street food icons such as a Doughnut Yakitori, fan-favourite Matcha Ceremony, and the iconic Japanese Chicken Curry Pie.

Introducing Black Star Pastry's Golden Dragon Cake in celebration of Chinese New Year.

This four-portion creation is topped with a delicate gold-dusted dragon made of fondant, representing this mythical creature soaring through iridescent dragonfruit 'clouds'.

Our single-portion Dragon Cake is topped with a gold chocolate coin inscribed with the Chinese ink calligraphy for the word Dragon, a symbol of prosperity, authority, and good fortune in line with the Chinese Zodiac.

Underneath sits layers of pink & white dragonfruit, delicate sponge, pineapple & vanilla cream, pomegranate jelly ripples, and a biscuit crumb base.

★ Introducing the Strawberry Watermelon Latte ★ We’re pretty excited about this and hope you are too. After years of toying with the idea and months of testing and tweaking recipes (we drank a lot of milk!), we are tickled pink to be able to launch two hot takes of our most coveted cakes, available in all Australian stores from today.

SWC LATTE
Our most iconic cake, reimagined. A top-secret SWC syrup and Milk Lab Almond Milk make the perfect pink drink. Almond milk delivers on the delicious layers of almond dacquoise found in the cake, while the syrup infuses notes of strawberry, watermelon and rose scented cream. A sprinkle of rose petals, a pinch of pistachio powder, and a spritz of fragrant rose water make good on the cake's original garnish.

HOT CHOC MIRAGE
Available with your choice of milk, Rooibos Tea (a staple in the Chocolate Mirage slice) is strained and mixed with caramel to achieve a unique butterscotch flavour. Hazelnut syrup and hazelnut paste add sweet, roasted notes. Finally, Madagascan Manjari Chocolate brings acidity and sharpness to the recipe. It's dusted with chocolate and gold and served with the passionfruit chocolate and yuzu chocolate sun, as seen on the Chocolate Mirage cake.

Earl Grey Chiffon
The perfect tea-time indulgence. This light and fluffy sponge is infused with earl grey tea, then iced with earl grey buttercream and a drizzle of yuzu lemon icing. Finally, it is garnished with fresh lemon and lemon thyme.

Lemon Myrtle Chiffon
This light and fluffy sponge is scented with lemon myrtle and fresh lemon, then coated in a light buttercream icing and covered with toasted coconut and lemon myrtle sprinkle.

Whole cakes are available to order online for collection from all Sydney stores. Lucky for Rosebery locals, both cakes are available by the slice at yours.
