Bloody sensational. I only discovered these last year as itβs not a common thing in the UKβ¦ crumbed lamb cutletsβ¦ and if you get them from a fab butcher like mine, they are bloody wonderfulβ¦ the most tender meat and a gorgeously seasoned coating!!
Served with some pea, mint and feta quinoaβ¦ sounds a bit w***y but so easy to make and a great side for fish, chickenβ¦. Anything really!!
1. Wash a cup of quinoa in running water and pop into a microwaveable bowl
2. Pour in 2 cups of chicken stock and microwave for 5 mins.
3. Leave to stand for 5 mins
4. Microwave for a further 2 mins or until the stock is absorbed
5. Stir in some chunky crumbled feta, chopped mint, frozen peas, lemon zest and juice of half a lemon.
6. Microwave 1 more minute until the peas are just warm π
7. Serve sprinkled with extra mint and some more lemon zest π₯°
