this was one of our most popular dishes of the year, and couldn’t be as good as it is without the help of the procurement team at greens supermarket.

they helped us source zucchini flowers all year long, imported the amazing parmesan from Tuscany and gave us the most incredible almond ricotta cheese we’ve ever had.

our chargrilled corn with chipotle tahini, shaved smoked queso, chilli salt, coriander and fresh lime

so much flavour happening here with this seemingly simple dish - but you’ve got the juicy sweetness coming from the corn, the spice and earthiness that comes through from the chipotle tahini, smokey flavours from the queso, mild heat and saltiness from the chilli spice mix, and then refreshing flavours finish it all off from the coriander and lime

it’s been on our menu since day 1 and we can’t ever see it coming off

guac’ is life…

Our guac is kick ass. No other way to describe it. Its simple, tastyAF and uses nothing but the freshest ingredients.

Where to start? Well, we smash locally grown avocados just enough to leave a few chunks in there, blend them with a mix of golden eschallots, locally grown chilli, fresh lime, sea salt and coriander - then in the true spirit of a ‘marriage made in heaven’ we partner it up to a kind hearted pico de gallo salsa that has fresh corn, chopped up roma tomatoes, mint and a little sumthin sumthin - whack some organic corn chips next to it - a wedge of lime, drop some wicked pickled chilli and BOOM - the best darn guac this side of Mexico

our wild mushroom quesadilla…
a buckwheat and chia tortilla is topped with sautéed mushrooms, pickled shiitake, rosemary, thyme, queso and truffle essence - then folded over and thrown on the plancha to grill. It’s the topped with a mushroom confit and wild rocket with an agrodulce dressing

it’s about as boujie as we get here but certainly isn’t out of place on our menu

charred chick’n tacos…
our chick’n is marinated for 24 hours in a smoked chilli and maple vinaigrette, then charred on the plancha and served on a tortilla with our freshly smashed guacamole, raw slaw, fermented local chillies, pickled watermelon, chickpea crema and coriander. We serve it with a wedge of fresh lemon to give it a refreshing citrus burst - legit chef kisses 😘

our guacamole, where to begin.

I remember being told by an old hospo vet many many years ago that the mark of a good restaurant was the way they went about the basics.

For us at vandal, it all starts with our guac’. It’s present throughout in our cuisine and for us the foundation of many of our dishes.

Made daily to order, we pair it with a tasty pico de gallo salsa, house-fermented local chilli, eschallots and a sprinkle of sea salt. Perfect to squeeze some fresh lime over the top, and it’s all partnered with what we think are the lightest, tastiest and crispest totopos this side of Oaxaca. Secret, they’re baked, not fried.

our chørizø and roasted potato empanadas, served with salsa romesco, piquillo peppers and charred corn

this is just one of those dishes we love for it’s ugly deliciousness

it’s not that pretty to look at and it can be messy when you get your hands on it but when you bite into it - my oh my is it tasty as… the chørizø had just the right kick to it that’s softened by the roasted potatoes, the melted cheese provides a silky smooth compliment to the crisp flakey exterior and the salsa romesco sits patiently on the plate to mop it all up

we took it off the menu for a while and boy did we cop some heat for that, so cheers to the perfect ‘add on’ to our set menu or even as a quick bite with a margy chaser to foil that winter cold

📸 roast celeriac katsu taco
peruvian yellow chilli salsa, guacamole, raw slaw, pickled chilli, chickpea mayo, coriander and fresh lime

how’d we come up with this amazing little dish?

Firstly, I have a love for roasted vegetables. You gotta have the love for the main ingredient of the dish or it will never work.

So with that in mind… we found the that by slow roasting the celeriac overnight we get great a depth of flavour, then we let it sit, crumb in seasoned Japanese panko and crisp it up to get the tastiest katsu imaginable.

Then we add to it a mayo made from the leftover water you have when you rehydrate chickpeas to give the dish a creamy mouthfeel and to basically double down on the earthy characteristics you want from@a slow roasted vegetable.

We then added lighter and zingy flavours to balance it out like the guacamole, fresh lime, coriander and pickled chilli

Then to make sure it dances all together harmoniously in the corn tortilla we top it with a mild peruvian yellow chilli (aji amarillo) that adds gentle warmth whilst allowing the other stronger flavours to shine

this taco is great as is, but is taken to another level when you squeeze the fresh lemon on top to give the smokey chilli chick’n a zing of citrus to lift it to another level - it’s got so much going on in every bite… don’t take my word for it come fry it yourself
