Our co-owner and restaurant manager Kiehyon is a bit of a legend around these parts. He worked in some of Australia’s most prestigious dining hotspots–including Mr Wong and Tetsuyas—before bringing his skills to Kazan. Kiehyon takes a hands-on approach to hospitality so next time you visit, you’ll probably spot him overseeing all the little details that make the restaurant tick. Be sure to say hello!

What’s behind the name?

Kazan was a Japanese emperor known as a peace-maker and artist. It’s also the Japanese word for volcano, which inspired the circular design of the restaurant—where our chefs overlook the main dining room from their kitchen stage.

When working with beautiful, fresh seafood, the skill lies in simplicity—and letting the quality of the produce speak for itself.

Did you know that nigiri is meant to be eaten fish-side down? To avoid over-saturating its delicate flavour, dip the fish in soy sauce, not the sushi rice. Eating it with your fingers (instead of chopsticks) is also encouraged!
