Mhu Daad Diew or sun-dried pork is a food that has been around in Thailand since ancient times. In the past, there were neither refrigerators nor tools that help facilitate food preservation. This led to the invention of a process that would help extend the life of pork and prevent spoiling. With folk's wisdom, the knowledge called "sun drying" was born.

Padt Mee Kati (ผัดหมี่กะทิ)

This authentic Thai stir-fried noodles is vibrant in pink colour derived from fermented tofu with red yeast rice. Even if the dish has been well-known in Thailand for a very long time, it is not a common food we can easily find in big cities. In some rural provinces, the locals will welcome their guests during auspicious ceremonies with this colourful deliciousness.

Last week, Chat Thai organised a wine training session for our staff, with the help from Samantha Payne, our Wine Specialist.

We had so much fun getting to know the origin and characteristics of over 20 wine types that we offer at our restaurants, from an easy-drinking white wine like Riesling to a sophisticated selection, such as amber wine made from Chinuri, that those who have acquired taste appreciate and fall in love with.

Not gonna lie, we all got a bit tipsy during the training session (Well, look at the first photo and see how blurred it is.), but rest assured the knowledge was 100% captured.

Happy Lunar New Year! To celebrate this festival together, Chat Thai would like to share 5 facts you probably don’t know about this celebration in Thailand.

1. Do you know which country in Southeast Asia has the largest Chinese population? Surprisingly, it’s Thailand! Ethnic Chinese make up 10-14% of the population of Thailand. That’s why Chinese tradition have a deep-rooted influence in Thai culture.

2. Can you guess what is the most active Chinese festival in Thailand? Of course, it’s Lunar New Year! It’s a magical moment when Thai Chineses reunite with their family, pay respect to ancestors, and celebrate together.

3. Giving ‘Ang Pao’ or the red envelope to their beloved ones is a custom that Thai Chineses hold dear to their hearts as it is not only about money inside the package but also blessing for happiness, health, wealth and good fortune.

4. Not any amount in the red envelope will do. Number 4 is a forbidden one as it is associated with death in Chinese. The best numbers to put in there are 6 and 8 since they represent smoothness.

5. Why red color? Well, the significance lies in the red paper, which symbolises good luck, health, prosperity and happiness. In addition, the color also wards off evil spirits.
