Fresh Hiramasa kingfish thinly sliced and rolled with pickled kohlrabi, rhubarb purée, buttermilk, mandarin oil, grapefruit segments and shiso! Fresh and tasty, perfect for this weather!

The perfect comfort food for this weather… spaghettini carbonara with black pepper, guanciale, egg yolk, Parmesan cheese and finished with our roasted chicken wings « Garum ».
Garum is a fermented sauce originally made from fish in the Roman times. We used roasted chicken wings and koji for our own, a pure umami bomb!

“Black Bottle operates like a cave a manger in France, or a bacari in Venice: you choose your food from an idiosyncratic and changeable selection displayed, in this case, in a glass cabinet in front of the tiny open kitchen... The rabbit rillettes – a little glass jar of slow-cooked rabbit made in house: half terrine, half confit – is fantastic (though the three slivers of toast is not enough for the most self-controlled single girl, let alone a table of three, two of whom are men). An excellent saucer of oxtail and chorizo stew with polenta is smoky and creamy by turns; a handful of whitebait is flash-fried and served with squid ink mayo. But wouldn't you know: the standout items are the scallops – grilled in their shell with butter, samphire and jamon – and the fresh, briny oysters.” Sydney Morning Herald
