‘Handmade’ wines, is a project that I have been working on with my heart and soul for a very long time. Like many others, it has been always a dream to make wine in France. To be part of the harvest with friend winemakers.. to touch the grapes themselves.. to taste them themselves.. and to decide for yourself what to do with it. And so this was happening since the 2014 harvest. First as an experiment for own consumption but now also for sale.

By working very precisely, from manual harvesting to bottling by gravity these wines are given their maximum expression and complexity. Wines with a very own personality and unseen purity by fermentation and maturing on dame-jeanne, without added sulphites. The production is very tiny and most wines are bottled in an original hand labelled and waxed 50 cl. bottle. After blood, sweat and tears, we now can finally release some of these special ones, made with care and love. A big thank you to my friends who helped in the process and also to the friend winemakers who have given me this opportunity.

The drawing on the front label is designed by the young talented Fleur De Roeck. On the back label you can find all the information about the wine.

Dit weekend in De Morgen Magazine. Natuurwijn, hype of blijver?
Over hoe ik de biodynamische wijnbouw twintig jaar geleden allemaal een beetje hocus pocus vond en nog zoveel meer.

En met een fles van één van mijn zelfgemaakte wijnen Mélodie de Silex in de rubriek van favoriete natuurwijnen.

‘Wouter De Bakker van Terrovin maakt al enkele jaren wijn voor eigen gebruik, van druiven die hij bij bevriende wijnmakers koopt. Dit jaar verkoopt hij die voor het eerst. Wouter zweert bij handmatige bewerking, van oogsten tot bottelen, om zo een maximale expressie en uiterste complexiteit uit deze druiven te halen. Deze Mélodie de Silex 2018 is een sauvignon blanc uit de Loire-regio die bekendstaat om zijn bodem van vuursteen. Hij kreeg een jaar vinificatie op dame-jeanne om de puurheid nog meer te accentueren. Daarna liet Wouter de flessen nog eens anderhalf jaar op fles rijpen. Wat resulteert in een evenwichtige wijn met veel complexiteit, kruidigheid en mineraliteit. Wees er snel bij, want de oplage is met 180 liter uiterst beperkt.’

Our amphora project is an experiment that starts with the late Pierre Weyand, a winemaker who took over the vineyards from the myth Eric Callcut in the Loire valley. They both worked in the same philosophy with an immense respect for nature. He made wine without artificial additions or any intervention in the cellar. His goal was to work with the most healthy and clean grapes as possible to create one of the purest and honest wines ever. To deepen this philosophy, he used an amphora. Unlike an oak barrel, an amphora doesn’t give off any taste. And because terracotta is porous, you get a subtle oxygen that refined, gives precision and homogeneous the wine. Ageing natural wine on an amphora is making wine in its most naked form. It is pure juice from healthy grapes, without added sulphites. It is wine in which you taste every detail of it. By tasting Pierre Weyand’s wine, I learned that an amphora wine can give an unseen purity, minerality and taste precision. As I still know winemakers that are able to make exceptional wines when you give them an amphora, I decided to recover Pierre’s amphoras after his sudden unfortunate accident in 2009. The first amphora was given to the young ambitious winemaker Etienne Thiebaud from Jura. He’s someone who, like Pierre, works very pure, does not use sulphites and make wine on a high standard. Etienne was won for the experiment and we filled up the first amphora wine back in 2012. Since then winemakers as Alexandre Jouveaux, Michel Guignier, Grégoire Perron, Renaud Bruyère & Adeline Houillon created already wines on our amphoras. I will never forget the great memories with Pierre and these amphora creatures are produced to pay homage to him as a legendary winemaker but also as a friend.

Is this the first ‘vin de garage’ from Jura?

Sylvain has been making wine for years and days.. just in his garage.. just as a hobby and.. just to drink with his friends, but guys what for wines! And what a luck that I was seated by accident next to him somewhere in Jura on a beautiful spring day back in 2018. Suddenly a bottle without label and only yellow wax showed up on the table. It was a bottle of Sylvain, a pure Savagnin of the vintage 2007, produced from late harvest grapes with an ageing of 8 years on a barrel ‘sous voile’, like vin jaune. Oh my God, this was insane. Since then, this winemaker never stopped surprising me. We are so proud that we finally can distribute these beauties after so many pleas since that spring day. He inherited the small top fields who he’s working organically from his father and they are spread along the Jura landscape in the villages Champagne sur Loue, Buvilly, Arbois, Montigny lès Arsures and Chamoz. On a total surface of only 1,50 ha. The wines of Sylvain go through a long natural fermentation on barrels. Bottles full of energy, power and minerality. These are unseen unique wines that can easily withstand the test of time.

AMPHORA N° 13 is labeled and waxed!

Michel Guignier chose his best grapes in 2018 to fill up our Amphora. After 12 months in the Amphora and 12 months in the bottle, the wine is now ready to sell. Only 120 bottles made of this wine. Gamay can’t get any better than this.

La Star dinner 💛 (Pierre Weyand & Josette Médau) will take place on Monday night 6 April (Amsterdam) at 19h.

Túbo Logier (ex Chambre Séparée and In de Wulf) will prepare a 6 course menu adapted to the wines of La Star.

We will pouring 2 wines each dish together with sommelier of the house. Wines that are aged and truly unique. It’s gonna be epic.

Pierre Weyand & Josette Médau - La Star ⭐️ dinner coming up.

Pierre & Josette took over vineyards from the myth Eric Callcut - The Picrate who made legendary wines between 95 and 99. While Pierre was replanting his vineyard Le Paradis back in 2009 he sadly left life in a tractor accident. He made wine with his lovely wife Josette from 01 till 08. Chenin Blanc, Cabernet Franc and Cabernet Sauvignon came from very tiny amount of vineyards spread over Saint-Aubin-de-Luigné and Beaulieu sur Layon along the Layon river on pure grey slate slopes. He made exceptional wines out of the box. Pierre was one of the greatest terroir winemakers that the Loire has ever known. This dinner will be a beautiful memory of Pierre.

Our Amphora project started back in 2012 after we recovered the amphoras of the late Pierre Weyand. Who made incredible wines from the former vineyards of the myth Eric Callcut. One of the goals from Pierre was to make one of the purest and mineral Chenin Blanc in history. That’s why he experimented with making wine in 2008 on an amphora. This wine, later called Terminal, was the greatest masterpiece and last wine he ever made. For the love of pure wines and to honor Pierre Weyand we continuing making wines on amphoras. For this project we are working with the biggest natural winemakers like Etienne Thiebaud, Grégoire Perron, Alexandre Jouveaux, Michel Guignier and Renaud Bruyère & Adeline Houillon.

This Amphora n°6 (2016 vintage) is a blend of 75% chardonnay and 25% savagnin from vineyards in Arbois Pupillin. The wine was aged for 18 months on the amphora.
Only 90 bottles made of this wine.

This story is about a grape variety, a distant cousin of the Sauvignon named Fié Gris, wich survived disappearance thanks to a serie of improbable circumstances, luck and thanks to the steady will on a single vigneron of the Loire, Jacky Preys. When Jacky took over some vineyards in the mid 80’s he discovered some rows of very old vines (110 years old) wich was part of the deal and wich the seller had said was a not-clearly-identified white variety. Being mostly interested in the white-variety part of this vineyard purchase, he had the bad surprise to see that some grapes weren’t white but rosy, almost red. He was a bit upset and asked about it to the former staff. They said that even though the skin looked almost red, the inside was white, so they were making white wine with this variety and blended it with the Sauvignon. A red blended with a white, that sounded weird for Jacky Preys, but at the press he saw that the juice was indeed white, so he did like they always had done here and blended it with the other whites. But he kept a vat of this juice on the side to taste to friends and visitors and everybody was saying that’s good, where does it comes from? Piqued by curiosity he called the INAO, who didn’t have an answer either, so they called a retired, knowledgeable former INAO specialist who came at the winery. The man was about 80 years old and know quite a lot about the varieties, when he saw the vines he said: You have a gold mine here. This is Fié Gris, this variety is supposed to have disappeared a century ago... The man said that this variety was common in the past in the Loire, and when the Phyloxerra devastated the vineyards, it was usually not replanted because it was a low-yield variety. Jacky Preys himself made massal selection to plant more on his terroir. They were even included in the French vine library, but after years INAO wouldn’t include the grape in the AOC system. Another unbelieveable thing is that you’re not allowed to bottle it as a single-variety, even use the name Fié Gris. Loads of respect for al these winemakers who bring back to life al these ancient varieties and fight against the system.
