Today we’re talking about annatto 🪴🪴🪴

Originating in Amazonia, annatto seeds are aromatic seeds, very rich in carotenoids. With a very light, subtle flavor, they have a slightly peppery taste, without being too pungent, with a hint of nutmeg, first sweet then slightly pungent. Among its many uses in gastronomy, this seed is known as the base of the Mexican marinade for meat in tacos.

A new week begins and this time we’d like to highlight one of the essential elements of Mexican cuisine: maiz tortillas 🌮🌮🌮

The tortilla de maiz is typical of the Mesoamerican region, where it has been eaten since pre-Columbian times. The process of nixtamalizing the corn yields a dough, the masa, which is then cooked on a comal in the traditional way.

Today we’re unveiling one of the culinary secrets that make Piña Taquería a truly authentic taco bar.

Every week, our chef Dimitri prepares Pastor’s spit for hours on end. After perfecting his recipe for Achiote, he marinates the pork tenderloins to build up layer after layer (inserting a thinner tenderloin after a thicker one) of Pastor’s spit. To cook this delicacy, we use a vertical oven (known as a brasa), following the tradition of old-time shepherds (called « pastors » in Spanish) to cook the meat.

Now you know you’re eating your Al Pastor tacos, you’re enjoying a dish whose every element has been hand-crafted after hours of hard work and dedication by our kitchen team.
