Greenfish Sushi, Canada’s First Sustainable Sushi Takeaway
In September of 2019, Calgary’s Avenida Food Hall and Fresh Market became home to the first Greenfish™ Sushi location – collectively conceptualized and realized by acclaimed Chef Darren Maclean and Chef Duncan Ly. Duncan has been sourcing and working with sustainable fish for several years and presented this opportunity to Darren. The two are long-standing champions of sustainability in the culinary industry and saw this venture as a way to realize a collective dream. They are both passionate about recovering at-risk species in our oceans, and reconciling the discrepancy between sustainable food choices and our access to them.
Greenfish™ is set to expand its reach within the next five years, operating as sustainable hubs for cities across North America, providing transparent and delicious sustainably-sourced seafood. Our business model of social entrepreneurship is designed to have an impact on both customers and franchise owners, but more importantly, on our oceans. Our corporate structure is set to allow for and create opportunity for our employees and franchisees. We intend to place focus on sustainability, health and global impact, which means that all employees know and understand how their work is impacting the global fish supply and heart of the oceans overall.
