Today is International Coffee Day, and we want to celebrate the people that make our favourite drink possible. We’re fortunate to have such an incredible community of farmers and producers who have shared their knowledge, opened their homes to us, and laboured to produce spectacular coffees for us to enjoy. Our trips to them each year are truly special and fulfilling. 🌱 We also want to thank YOU for your continued support of the specialty coffee industry. We love this global community and are so thankful to be a part of it. ☕️🖤

Today is the National Day for Truth and Reconciliation. It’s a time for us to pause to reflect and honour the survivors, families, and lost children of Canada’s appalling residential school system. This troubling legacy is something that we continue to wrestle with today, and its effects are deeply felt. We must reflect on these painful mistakes, deepen our understanding, and connect with our community to ensure we do better in the future.

We are committed to continuing to listen and support our local Indigenous communities, and recognize that there is always more that we can do. If you know of worthy causes to support, or have ideas for how we can improve, please share them with us. 🧡

In honour of Pride, 100% of the proceeds from these bags will be donated to , whose mission is to promote equality and celebrate Calgary's diversity. Their vision is a city free from discrimination against gender identity, gender expression, and sexual orientation, and they undertake valuable work to facilitate these goals.

They're an incredible not-for-profit organization and we're thrilled to support them.

Last week, we were visited by Franci Martinez. Franci is married to Jose Martinez (who was unable to travel due to a visa technicality 😢) and visited us all the way from the south of Huila in Colombia. We have been working with Jose and Franci since 2014 and it was amazing to be able to show Franci around and for her to see how Calgarians taste and interact with their coffee. Their Pink Bourbon has long been a fan favourite 👌🏼. She had a chance to see most of our cafes and meet lots of baristas, which was definitely a highlight for her. 🇨🇴🖤

Phil & Sebastian are heading to Copenhagen for World of Coffee! While there, we're hosting an exclusive coffee tasting at with legendary producers, Ratibor Hartmann and Mauricio Shattah, at Coffee Collective Carlsberg Byen on Wednesday, June 26th.

Ratibor Hartmann and Mauricio Shattah are world-class coffee producers. Their coffees have won national competitions, in Panama and Colombia, as well as being used by top baristas and brewers in the finals of WBC and WBrC multiple times. They’ve been working with us since 2010 and are unveiling two awesome coffees for this event - the Hartmann Reserve Washed Geisha and La Negrita’s Natural Red Geisha. Phil & Sebastian will also host a third tasting with five of the top Costa Rican coffee producers: Kevin Naranjo, Tacho Solis, Allan Oviedo, Luis Monge, and Francisco Mena - all of whom have been working with us for several years.

We can't wait! See you there ✌🏼

'Tis the season for camping, outdoor adventures, and kick-ass instant coffee ⛺️☕️. Stock up on our Addisu Kidane from Ethiopia, transformed by our friends at . Not "good for instant" kind of good...it's just really good coffee. You'll taste peach, vanilla wafer, and notes of black tea.

Pro tip: don't use boiling water! 175°F / 80°C is the sweet spot, but many temps below water work well 👌🏽.

With .philandseb, we threw away all our preconceived notions of what our food should be. We spent over a year developing a menu and building an amazing team to offer awesome yet simple flavours. We didn’t want fancy food, just good food—all made from scratch with ingredients from our local farmers. 

Find everything from quick bites, sandwiches, smoothie bowls, big brunch dishes, and more. Bloom will be available in Bridgeland 7 days a week from 7:30 - 2:30 M-F, and 7:30 - 3:30 on weekends.

We're immensely proud of our friend for winning the 2024 Cup of Excellence! 🏆👏🏽 We've known Benjamin since 2011 and these accolades are so well deserved - he's a great ambassador for so many producers in Santa Bárbara. 🇭🇳 Many of you will have enjoyed his coffees, and we always get amazing feedback when we have them on. We had an amazing time on Saturday at for the inaugural Roaster Takeover! ☕️🕺💃🏻 We loved introducing our coffees to new friends and it was the perfect opportunity to unveil the exclusive Mi Finquita Natural Geisha - a tiiiiiny lot of truly spectacular coffee from Ratibor Hartmann. If you didn't get a chance to try it on Saturday, find it on the Eight Ounce website or keep an eye out for a handful that will make it into our cafes ☕️💨👀.

Last chance for the Finca Momoto Natural Geisha! 🌱 This coffee is delicate, sweet, and tropical, with a twist on classic geisha flavours. It's been the largest lot of our Uncommon Collection tins and we're down to the last batch, so grab yours if you've been eyeing it ☕️💨👀.

CSI: Calgary? Nope! Phil is inspecting green coffee samples from Ethiopia. This is part of our physical analysis of coffees to help gauge whether we’d expect the coffee to arrive to Calgary in the condition that we’d want it to. We freeze all of our green (unroasted) beans as soon as they land in Calgary, but a lot can happen from the time we purchase them and over the course of their long trip from origin.

He’s looking for luminescence, which shows whether or not there are a lot of over-ripe beans or signs of moisture damage. This is one stage of our physical inspection, which is joined by water activity tracking, ambient light checks, evenness, and density checks of individual beans.

Physical analysis is used heavily in the commodity coffee space, whereas the specialty coffee scene focusses most of its attention on cup performance. This is now shifting, as the benefits of additional screening and physical analysis are becoming more obvious to fussy specialty roasters. We’re not shy in saying that we’re particular (understatement of the year), and we use cupping performance and physical inspections to gauge whether we will purchase a coffee lot. If a coffee fails, we unfortunately need to reject it. It’s tedious and can be disappointing at times, but the benefits in quality and consistency of coffee are well worth it.

INSTANT IS BACK! ☕️💨 The Addisu Kidane from Ethiopia has been a beloved coffee this year, and our friends at have turned it into a pretty kick-ass instant 🔥. You'll taste peach, vanilla wafer, and black tea.

Grab a box for the office, or pack it for your next flight or camping trip ✈️🏕️. Life's too short to drink bad coffee 🙅🏻‍♂️.

We hope our coffees inspire you. We know the coffee in these bags is really tasty, and while we can take some of the credit for sourcing and roasting it for you, most of the credit needs to go to the coffee farmer. 🙏🏻
