No changes for takeout orders. However if dining indoors we will require proof of vaccination or a negative rapid test completed in the last 3 days. Alternatively, documentation of a medical exemption will also be accepted.

Our monthly coffee flights are here! ☺

Every month we will be showcasing three unique locally roasted coffees! This month, we are starting close to home. David Kim's Sezita and Duvixe will be our features next to our regular rotating batch brews. If you've ever wanted to explore different coffees and flavours this is the perfect opportunity!

Today we did a coffee tasting of different brew methods using the same bean; an Ethiopian Werka (named after the region).

It is really fun to see how these different methods affected the flavour and aroma of the bean. We lined up an Aeropress, Clever Dripper, Fetco (with a UFO spray-head mod!) and french press and ground our beans specifically for each one, brewing each at a 1:16 ratio.

For people at home, we personally recommend some degree of immersion brewing! This means letting the grinds sit with the water for some time. Immersion brewing is generally more forgiving of different settings as it helps with more evenly extracting the coffee. All brews except the Fetco had an immersion brewing element to them.

The impact of paper filters was also really evident. The French press produced the most textured, heavy-bodied cup, while the Clever Dripper provided the most well-rounded, clean finish in our run.

Today is Canada Day and like many other Canadians we are taking some time to reflect on our identity and the horrible news that has come to the spotlight regarding Canadian Residential schools. As immigrants, there are so many elements of Canada that we are so proud of, but as citizens we feel that we also bear the responsibility of Canada's past - both the good and the bad.

It is difficult to write any words that feel like they are adequate to fully encapsulate the horrors of the cultural genocide that occurred. There are plenty of Indigenous resources that are available; we would like to use our platform to encourage you to read the works of Louise Bernice Halfe, Canada's Parliamentary Poet Laureate and a survivor of an Alberta residential school.
Every time a story is told and remembered, it is kept alive and fights back at the attempts to subdue its culture.

Furthermore, until the end of this week we will donate one dollar from every drink sale to the Legacy of Hope Foundation. This Indigenous-led charity has been working to promote reconcilation efforts in Canada for over 19 years. They create educational ressources for schools and the general public on Indigenous history, residential schools and awareness of the stigmas and issues Indigenous peoples still face today.

This is only a small gesture but we encourage you to take part however you can: Donate, educate yourself, support Indigenous-led organisations and artists.

It is our collective responsibility to help make Canada a more inclusive, safe and equal space for ALL Canadians.

First is a Coffee Concept Chiapas Mexican bean harvested by an all women cooperative. Medium roast with notes of caramel, cherry and chocolate.

Second is David Kim 'Wild', a naturally processed light roasted mixed Ethiopian bean with notes of plum, rose hip and pomegranate.

Hey Calgary! How's your week been? How's your month been??

To be honest the third wave has been hard on all of us, and we've been no exception.

We feel for parents that are stuck at home trying to juggle work and at home learning, exhausted health care workers, and all the other local businesses that are impacted by this.
