Last week we did a Raspberry Bicoloured Swirl with Almond Cream and it went so quick (thanks to you guys!)! This week, our is very similar, but we’ve rolled it in the form of a mini pain au chocolat! It has a Raspberry Bicoloured Dough with a Hazeulnut Almond filling!! Come tell us which one you prefer!

Owning a small business has its ups and downs, sometimes you just need to stop and be thankful for things that just fall into place. A few months ago, a certain someone with the most positive energy walked into our bakery asking for a chance to bake. His demeanour and his passion for baking set him apart and made the decision to have him be a part of our team, very easy. We’d like you to meet Adrian! He loves a challenge, loves to break his own records, never says no, and he has impressed us by being one of the fastest learners of our morning bake. As someone who is taking Urban Studies at UofC, he is always thinking of new ideas and new ways to improve. Sometimes we think his mind works faster than he can talk! When he’s not at work, you might find him at an art show (he’s an artist!) or napping in a park! We are thankful he walked in when he did, now we can’t imagine our team without him! For someone with no prior baking experience, he definitely “proofed” himself to be a an amazing baker!

With summer in full swing, we wanted to do something a little lighter but packs a lot of flavour! Our today is a Raspberry Bicoloured Croissant Swirl with Almond Cream and a Mixed Berry Compote inside of it!
The berries give this a nice tart flavour and the almond cream sweetens it right back up! We might have to bring this back again!

In case you missed it, friends, you can now find our Almond and Buzzlight Year croissants at !! They offer delicious Vietnamese Street food, amazing (and strong) Vietnamese drip coffee and now you can finish your meal with our croissants! This is our first Stampede, joining y’all for breakfast! We are open throughout Stampede weekdays at 730am and weekends at 9am!

We are sticking with the theme and doing craffles with chocolate bacon, then filling each craffle square with maple syrup!

As our team discussed about Canadian breakfasts that involves bacon, pecans, maple syrup, pancakes and more….we discovered that most countries don’t sell KETCHUP CHIPS at their local grocery stores!

So we decided to combine this Canuck classic with BACON! Introducing our Ketchup and Bacon Puff Pastry for our !

We are a team of 10 that’s made up of people who were born and raised here, people who’s parents immigrated here, some who have spent more than half of their lives in Calgary and also newcomers from around the globe!

If you have visited us in the past or even hung out in our viewing room, you might’ve over heard some of our conversations about our new discoveries in Calgary! Did you know our C train offers free rides in our city centre? Did you know there are deers, coyotes, porcupines, and many species of birds who all call Nose Hill Park home? When was the last time you drove to a new spot in the city and learnt something new?

We are so grateful for having a chance to work together and learn about each other’s new life here in Canada!

Prepping for the weekend is one of the things we look forward to the most at the bakery. We love the “go go go” energy, and we love when we’re able to talk to all of you! There’s only ONE MORE WEEK until the and for the first time ever, WE WILL BE OPEN during the Greatest Outdoor Show on Earth! This sunny weekend has us going to Infinity and Beyond! Our Buzzlight Year has been going strong this whole month! Thank you guys for loving our and helping them become a staple at our bakery! If you plan on camping or heading out to the mountains, be sure to come grab some pick-me-uppers!

Our Mini Lemon Chia loaves have a Berry Compote filling and are brushed with a sweet Lemon Syrup! They’re super delicious and refreshing, the perfect summer snack! These are available exclusively at any .ca! Have you tried them yet?

Kouign Amann, made with our 81 layer croissant dough, each layer is filled with more butter and sugar! While it gets baked at a high temperature, the sugar caramelizes to create a crunch shell on the outside and keep the inside nice and sweet!

To all the tough love dads out there, we know you put up that shield to protect us, to show us how to stand up for ourselves, but we know when we crack it open, you are the sweetest of all.

Father’s Day is fast approaching! Our Buzzlight is for the dads who go to infinity and beyond for you. The Pandan croissant filled with our Ube Coconut cream and stuffed with a soft Coconut Mochi! They’re practically made for the hero in your life who’s soft on the inside! Available on the weekends! Stayed tuned for all the other “dad” croissants!

We know a lot of you have been asking about our croissant and we want to let you know that we have been working on a variation of it! One of our favourite versions is today’s !! This one has a sweeter flavour and smoother texture. But what we really love about it is Steven’s house made or soft cookie crust on top of the croissant!! It adds another layer of texture and combines perfectly with the salted egg yolk custard! This is our DOUBLE BAKED version of the SALTED EGG YOLK croissant!

Good morning everyone, we’d like to introduce you to one of our newest members! Meet Yuria! Don’t let her cute looks fool you, this girl is one of the hardest working people we’ve ever met! She is full of talent, travels, stories, and she’s full of life. She brings a ton of positivity into our work force and is always ready for a challenge, especially against herself! Her nonstop attitude even gives Karen a run for her money! Hailing from Japan, Yuria has done a ton of travelling and has accumulated an ample amount of experiences. She LOVES to eat, cook and share food and is responsible for one of our favourite , the Miso Puff with Crabmeat! We’re extremely thankful to have her on our team!

Our today is a play on an Ice Cream Sandwich! We used a house made Ube Semifreddo with Blueberries! This week’s Tuesday Test Run is MADE TO ORDER and will not be on display due to it needing to be frozen! To finish, we topped it off with condensed milk to intensify the flavour of the Ube!

A beautiful Monday to treat yourself! This weather is taking us back to Portugal days and strolling the city of Lisbon for cute shops, snacks and delicious coffee! Does anyone else have the travel bug now?
